Curried Bean Pilaf
I am a sucker for one-pot meals. They are usually quick and easy recipes that taste great. This is a complete dish and is the star of the dinner show. Yes, you can serve it with some meat or a nice green salad too. The plus? It is a Vegan Recipe and delicious!
Delicious Rating: For a spicier meal, add more curry paste or powder. The first time around I used brown rice and since brown rice cooks a lot longer, the meal was too mushy. The second time around I used white rice and it turned out great. There is a great balance between hot from the curry, sweet from the raisins, and the perfect crunch from the pecans. Overall, it is a good meal and I plan on cooking it again!

- 1 tbsp olive oil
- 1 onion, minced
- 2 green onions, minced
- 1 cup white rice, uncooked
- 2 tbsp curry paste
- 2½ cups vegetable stock
- 1½ cups black beans, cooked, rinsed, and drained
- 1 cup peas
- ¼ cup raisins, chopped
- ⅓ cup pecans, chopped
- Salt & Pepper to taste
- Heat olive oil over medium heat in a medium pan.
- Add in onion, cover and cook for 5 minutes.
- Stir in green onions and cook for an additional minute.
- Stir in curry paste and rice and combine all well.
- Add in vegetable stock, cover and cook for 45 minutes or until rice is tender.
- Gently stir in beans, peas, raisins and pecans and heat through.
- Salt and pepper to taste.
- Serve hot.

If you want more heat add more curry. Really play with it according to what you like.
