Herbs are used in small amounts to provide flavor to food. Often they are detected by taste and a wonderful fragrant aroma when cooked or fresh. What is your favorite herb? My favorite herb has to be basil. It is so fragrant and the flavor, wow! You can’t beat fresh basil in pasta, soup, or even in a sweet shortbread for dessert. There are many other herbs like Rosemary, Thyme, Mint, Oregano, and Parsley to name just a few. What is your favorite herb to eat and recipe to cook at home? Parsley Potatoes

 Tired of the same old side dishes? Don’t despair, Parsley Potatoes are here! Okay, that was corny but I couldn’t resist. I cooked meatloaf the other day and didn’t feel like making mashed potatoes or my typical meatloaf sides. The store had these cute little red potatoes so I bought a bag and some fresh parsley. This is an easy recipe with simple ingredients that never fails to please.

Delicious Rating: Cook up these bad boys with a hearty meat dish for a nice complete meal. They are buttered but you can use olive oil instead if you want. My DH said these were the best potatoes I have ever made…they were good but I think he was very hungry!

Herb & Lemon Salmon

 One of my many diets included in my yo-yo dieting (another story, another blog) was a baked salmon diet. Everyday I would eat baked salmon. By itself, on bread, with rice, in salad, atop pasta. I never once got tired of it. I would literally just bake a salmon fillet and that would be that. Rarely would I add any spices or sauce to the salmon, I love the taste of salmon on its own. However, my DH hated it. Baked salmon is so boring to him, even if it is marinated or covered in the best possible herbs and sauces. Well, it has been awhile since my baked salmon diet but I decided to give it another try and use some lemons since they were in town.

Delicious Rating: Delicious! Baked salmon is an easy dinner recipe that can go with grains, veggies, or whatever you please. The basil in this recipe combines so well with the lemon and parsley, total yum factor. What did my DH think you ask? Well, he said it was good…and then said, “I just don’t like baked salmon.” Okay, I guess it isn’t for everybody. What about you?

Cilantro Polenta & Bean Salsa

When I was watching one of the many season of Top Chef I started getting curious about Polenta. It seemed that every chef on the show would cook with it in one challenge or another. I just assumed I would never find Polenta here in Mexico but sure enough there it was at the grocery store. It is exciting to cook with a new ingredient, something you may never have even eaten before. I felt like I was on a Top Chef quickfire challenge and I had to think of something fast! This Polenta Recipe came to mind…but not as fast as those chefs think up easy recipes.

Delicious Rating: If you are not using quick cooking polenta make sure you continue to whisk and whisk hard! If you are not a cilantro fan than this recipe may not be for you. It is geared up with cilantro and some spiciness from the peppers in the salsa. I have to say that it was good and different. I really didn’t know what to expect. My DH enjoyed it and asked for me to make it again one day. I will for him but not for myself. It just didn’t do anything for my palate. Let me know what you think in the comment section!

Tomato Basil Soup

Soups are the quintessential staple in food history. They are cheap and easy to cook up. Comforting on a cold day and perfect to start a multiple course meal. My DH loves soup. Whether hot or cold, search smooth or chunky, here he always tends to give me a standing ovation for the ones I cook! I always try to cook soup on one of my busy days during the week. They are just so easy and you can always double the batch and freeze for another time. Pureed soups are rich and creamy (without the cream) so combining flavors that go together are a must. Tomato & Basil are fraternal twins, search so different but they ultimately are a perfect pair.

This is also a great healthy dish. It is full of veggies and all of their great benefits, plus it is Vegan & Vegetarian! If you make this a night or two before, you can put into a thermos or microwaveable container and take to work!

Delicious Rating: This easy recipe for soup can be made by a beginner…I hope. The steps are so easy: chop, boil, blend, boil! What could go wrong? If you are a true tomato & basil lover than this soup is for you. I think I would add cream or some sort of dairy to it next time for a different flavor but that is my own personal preference. My DH enjoyed it and said it was better than all those canned soups he grew up eating! I served this Tomato Basil soup with some french bread but would also go great with a grilled cheese sandwich!
