Avocado Broccoli Linguine

Serve with salad and some crusty bread
  • ½ pound linguine
  • 3 cups broccoli, cut into small florets
  • 2 tbsp olive oil
  • 1 bulb of garlic, minced
  • 1 tsp lime zest
  • 1 tsp red pepper flakes
  • 2 tbsp white wine vinegar
  • 2 tbsp soy sauce
  • ½ cup water
  • Juice of 1 lime
  • 1 tsp salt
  • 2 tsp pepper
  • 4 cups spinach
  • 3 avocados, cut into chunks
  1. Start to boil water for pasta.
  2. Add in linguine.
  3. In the last minute of cooking add in broccoli to pasta water.
  4. Drain.
  5. While the water is boiling & pasta cooking, heat pan over medium heat and add in olive oil, garlic, lime zest, and red pepper flakes.
  6. Stir garlic mixture around for two minutes.
  7. Pour in vinegar, soy sauce, and water and bring to a boil.
  8. Add in lime juice, salt, and pepper.
  9. Once sauce is boiling again, lower heat to a simmer and add in spinach and cook for an additional minute.
  10. Add in drained linguine & broccoli and toss and coat well.
  11. Turn off heat and gently toss in avocado chunks.
  12. Serve immediately.
