Beef Stroganoff (from leftovers)

Yields: 4 servings
Serve with a salad and bread.
  • 2 Cups of leftover Beef (give or take depending on what you have)
  • All-purpose flour
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 green onion stalk
  • 8 ounces fresh mushrooms, sliced
  • 1 10 ounce can of beef broth
  • 1 10 ounce can of cream of mushroom soup
  • 1 cup sour cream
  • Salt and black pepper
  • Cooked egg noodles
  1. Season your beef and heat or cook in a large skillet.
  2. Brown in olive oil and butter.
  3. Remove meat.
  4. Add sliced onions to pan drippings and saute until tender.
  5. Sprinkle with the flour and return meat to pan.
  6. Add broth and mushroom soup.
  7. Cook over low heat for 30 minutes.
  8. Add salt & pepper as needed.
  9. Stir in sour cream right before serving.
  10. Serve over cooked noodles.
