Curried Bean Pilaf

Serve alone or with salad.
  • 1 tbsp olive oil
  • 1 onion, minced
  • 2 green onions, minced
  • 1 cup white rice, uncooked
  • 2 tbsp curry paste
  • 2½ cups vegetable stock
  • 1½ cups black beans, cooked, rinsed, and drained
  • 1 cup peas
  • ¼ cup raisins, chopped
  • ⅓ cup pecans, chopped
  • Salt & Pepper to taste
  1. Heat olive oil over medium heat in a medium pan.
  2. Add in onion, cover and cook for 5 minutes.
  3. Stir in green onions and cook for an additional minute.
  4. Stir in curry paste and rice and combine all well.
  5. Add in vegetable stock, cover and cook for 45 minutes or until rice is tender.
  6. Gently stir in beans, peas, raisins and pecans and heat through.
  7. Salt and pepper to taste.
  8. Serve hot.
