Vegan Penne Olive & Artichoke Hearts

This is a Vegan Recipe! Serve with salad and bread
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 28 ounce can of plum tomatoes, drained & chopped OR 2 lbs of ripe plum tomatoes
  • 10 ounces of artichoke hearts, drained
  • 2 cups of corn kernels, drained
  • 3 tbsp of red wine
  • 1 tsp red pepper flakes
  • ½ cup olives, chopped
  • Salt & Pepper to taste
  • 1 lb penne pasta
  1. In a large pan heat olive oil over medium heat.
  2. Add onion and cook for about 5-minutes.
  3. Stir in garlic and 3 tbsp of tomatoes and cook for one minute.
  4. Add the rest of the tomatoes, artichoke hearts, corn, wine, red pepper flakes, and olives.
  5. Reduce heat to low and cover.
  6. Cook pasta as directed and drain.
  7. Season sauce with salt and pepper to taste.
  8. Place pasta in a large serving bowl and toss in sauce.
  9. Serve immediately.
