Vegetarian

Today a Vegetarian diet can be “flexible” to fit the person’s likes and dislikes, they are called Flexitarians. But a true Vegetarian diet eliminates meat, poultry, and seafood. period. no exceptions. The following recipes are true vegetarian dishes and some of them are vegan. Why not go vegetarian or vegan for a month and see how it affects you? I did and I truly loved it but I do love meat to so it is hard to go all the way. But I don’t call myself a flexitarian, I mean that is just unfair to those who do have diet restrictions and actually keep them!

Thick Vegan Black Bean Soup

I was trying to think of a more appealing name for this soup but the name is exactly what it is, a thick black bean soup that happens to be vegan and delicious. It is also a very easy recipe that is cheap to cook up for dinner any day of the week.

Delicious Rating: This soup is full of healthy goodness that tastes great. I blended half of the pot with an immersion blender which gave it a better consistency for soup but still had some chunks of vegetables and beans. My DH & I really enjoyed it and it is great with some garlic crusty bread!

Tangy and Sweet Coleslaw

Coleslaw is a great addition to a variety of meals. I love a good coleslaw that has an easy recipe and not overly creamy from mayonnaise. This is my go to recipe for coleslaw when I need and easy salad for a gathering or picnic. It is also a great recipe to go with barbecue. I cooked up this coleslaw to go with a some Kansas Pulled Pork Sandwich, a delicious combination!
Delicious Rating: Simple and delicious. With only five ingredients, this coleslaw is easy to make but packs a lot of flavor. The tangy comes from the vinegar and the sweet from the sugar. It is balanced and still creamy without being overloaded.

Tomato Soup

Soups are easy recipes to cook up any day of the week. There might be some prep with chopping vegetables but the cooking process is a cinch, just throw everything in a pot and cook for awhile. My DH loves eating soup, even in this hot Costa Rican weather. I love a good tomato soup and pair it with a grilled cheese sandwich…delicious!

Delicious Rating: This soup is delicious. It is creamy without all that extra cream. I added a little roux to make it thicker than a usually tomato soup. Serve this soup with some crusty bread or add some sharp white cheddar cheese to that crusty bread for a really unique and yummy flavor combination. This is a great recipe to cook if you have extra tomatoes or want a light lunch or appetizer to a meal.

Vegetable Pot Pie

Growing up I used to love to buy those individual pot pies in the freezer section. Then I grew up a little more and would buy the large deep dish ones from Costco. Oh! I remember them being so good!!! And now? Well, I have graduated into adulthood & cooking, and bake up my own pot pies. I can’t even believe that I use to eat those frozen ones! I love this recipe because you can really put whatever you want in it. This is a veggie pot pie but you can add some already cooked chicken to it if you want.

Delicious Rating: The sauce is the deal breaker. It is creamy, smooth, flavorful, and thick. No matter what vegetables you add in here it will taste delicious. The crust is so flaky and crisp against the soft but firm vegetables. I made my own crusts using my time tested pie crust recipe, the same I use for sweet pies, just minus the sugar. But you can buy some already made pie crust to make this recipe that much more easy for you. This is the perfect recipe for a chilly night or when you just want some comfort food!
