Today a Vegetarian diet can be “flexible” to fit the person’s likes and dislikes, they are called Flexitarians. But a true Vegetarian diet eliminates meat, poultry, and seafood. period. no exceptions. The following recipes are true vegetarian dishes and some of them are vegan. Why not go vegetarian or vegan for a month and see how it affects you? I did and I truly loved it but I do love meat to so it is hard to go all the way. But I don’t call myself a flexitarian, I mean that is just unfair to those who do have diet restrictions and actually keep them!

Split Pea Soup

I love peas. I eat peas out of the can cold…super yummy to me! About eight years ago I had my first bowl of split pea soup in New York. It was the best thing I have ever had. Like seriously, one of the best meals of my life.  And then eight years pass and I never have it again. I forgot all about Split Pea Soup until out of the blue one day my DH tells me that he loves split pea soup. “Um, since when?” I wondered, seeing that we have been married for a while and split peas have never ever been brought up into food conversations. So I decided to take a stab at it and now split pea soup is a regular easy recipe that I make at home.

Delicious Rating: This soup is delicious. My DH loves it and so do I! It is thick and hearty but at the same time it is light, not heavy and weighing you down. I love the chunks of potato and carrots. The split peas dissolve into the broth and cover each veggie in its greeness which tastes delicious. Since this is a vegan/vegetarian recipe, there is no salty ham that is often times found in a split pea soup. But believe me, you won’t miss it at all. The bowl below speaks for it self!

Parsley Parmesan Lemon Pasta

Simple and easy recipes are my type of thing, viagra 40mg especially after a long day of activities. And there is nothing better than a good bowl of pasta at the end of the day. Or for breakfast…or for lunch too! I think I just love pasta and this recipe is on top of my list!

Delicious Rating: This pasta is light and refreshing. Almost all of the ingredients you probably have right now in your kitchen. Just throw it all together and voila! You have got yourself a complete meal, and just add a side salad and maybe some bread and you are good to go. You can even add more veggies or herbs so let me know your favorite toss up pasta.

Thick Vegan Black Bean Soup

I was trying to think of a more appealing name for this soup but the name is exactly what it is, link a thick black bean soup that happens to be vegan and delicious. It is also a very easy recipe that is cheap to cook up for dinner any day of the week.

Delicious Rating: This soup is full of healthy goodness that tastes great. I blended half of the pot with an immersion blender which gave it a better consistency for soup but still had some chunks of vegetables and beans. My DH & I really enjoyed it and it is great with some garlic crusty bread!

Tangy and Sweet Coleslaw

Coleslaw is a great addition to a variety of meals. I love a good coleslaw that has an easy recipe and not overly creamy from mayonnaise. This is my go to recipe for coleslaw when I need and easy salad for a gathering or picnic. It is also a great recipe to go with barbecue. I cooked up this coleslaw to go with a some Kansas Pulled Pork Sandwich, a delicious combination!
Delicious Rating: Simple and delicious. With only five ingredients, this coleslaw is easy to make but packs a lot of flavor. The tangy comes from the vinegar and the sweet from the sugar. It is balanced and still creamy without being overloaded.
