Potatoes

Potatoes are more than just a starchy tuber. They are delicious starchy tubers! Okay, really, they are great. French fries, mashed potatoes, baked potatoes, smashed potatoes, potato boats, potatoes au gratin, potato salad, and I am sure there are a lot more potato recipes that I can’t think of right now. My dear husband loves potatoes in curry. They soak up all the curry sauce and taste great. I love to cook potato boats because you can really load them up on way more cheese than they give you at the restaurants and add a super great amount of bacon too!

New Classic Potato Salad

You can’t have barbecue without Potato Salad. I love just a basic creamy potato salad, nothing fancy. Every now and then I do change it up to give Classic Potato Salad a nice twist. This recipe is a twist on Classic Potato Salad. I usually add Blue Cheese (totally delicious) but omitted this time around for the sake of my DH. If you do decide to add Blue Cheese do so according to your tastes and fold in at the end of the recipe. The cheese goes perfect with the bacon, adding such a rich flavor to the potato salad!

Delicious Rating: This is a potato salad is an easy recipe for the beginner, no crazy steps or culinary processes. It is by far my favorite potato salad recipe, seriously delicious. I make it anytime there is a BBQ and baked beans. I just love how the baked bean sauce touches the potato salad…yummy combination!

Italian Squash & Potatoes

A perfect side dish for a pasta? Squash & Potatoes.

Yes, you can still have a green salad and some bread but why not add something a little extra? Squash & Potatoes.

My DH loves potatoes and I love squash so this dish works perfectly as a side to really any meal. Whether you are a Vegan, Vegetarian, or an Omnivore, you are sure to find this Delicious!

Delicious Rating: This  easy recipe so simple to cook. You can even prepare the squash and potatoes ahead of time and bake at a later time or the next day before dinner. I like my squash soft while I know others may enjoy it a bit more crunchy, so really you can control the level of cookedness(not a word) when sauteing them. Rosemary & Thyme are perfect for this dish. They both have individual tastes that when put together give such a depth to the vegetables and bring out the natural flavor of the squash & potatoes, they don’t overwhelm the veggies. I will definitely be making this dish again! Let me know what you think of it.

Classic Fish & Chips

When I went to London with my Sister, the one thing that I really wanted to do was eat fish & chips in a pub. It was the ultimate tourist experience. We found a little place on the street. It was actually underground which added to the experience. Our fish & chips were the best I have ever had or maybe I was just really hungry as it was the first thing we had eaten all day! Traditional Brit Fish & Chips are served with mushy peas. Peas mushed and seasoned. Most include some baking soda for an interesting almost bitter taste. I didn’t care for them so they are excluded from my Classic Fish & Chips.

Delicious Rating: Yummy! Nothing ever goes wrong with fried food! The batter is very thick but holds up well on the fish. I used halibut and it was so nice and fluffy. The fries are delicious. Crispy on the outside and soft inside. You can change up the seasoning with whatever you would like and even cut them into wedges. You may want some experience frying food so as not to overdo cook the fish. I will definitely cook this easy recipe again!
