Green Beans

Green Beans are really a fruit. I have them listed under Vegetables. I cook them as Vegetables so that makes them not a fruit. Sorry for the confusion this may start or has already started. I mean, fruits shouldn’t really be green right? Well, there is the green apple but it is tart and sweet, total fruit. Green beans are green and beany, total vegetable. Either way, I love green beans. My favorite is as my Szechuan French Green Beans. Yummy! Please try the recipe and let me know how they turn out for. I am sure you will be pleased.

Vegetable Biscuit Cobbler

Warm one-dish-meals are perfect for a busy winter day. Like a pot-pie, a vegetable cobbler creates a warm comfort food. I love biscuits and I love veggies, so why not put them together with a decadent sauce…and eat on the couch…

This is a vegetarian dish. You can make it vegan by swapping out the butter with vegan margarine. I used seitan and it was a great addition but not needed. If you want meat meat, please feel free to add it in. Just want the veggies? It will taste delicious as well!

Delicious Rating: Delicious, Delicious, Delicious. I will definitely make this a lot more in the future. No changes necessary for me. The vegetables stand out on their own and meld deliciously in the creamy sauce. The biscuit is divine. Crunchy crust with a soft warm inside…My mouth is seriously salivating writing this. This easy recipe has a lot of steps but is worth the wait.

Vegan Farmhouse Vegetable Soup

Soup is a regular staple in my home. I try to make one pot of soup every week or two. Cooking soup is an easy way to finish up any loose veggies you have that may go bad soon. It can be super healthy and tasty at the same time by incorporating the right herbs and spices to bring out the best flavor. I love this Vegan Farmhouse Vegetable Soup Recipe. It is so colorful and chock full of protein and fiber with the additional beans.

Delicious Rating: A Home Cook can masterfully cook up this soup. Nothing to it. Adjust the seasonings to your liking and it would even be delicious with some Cayenne to add a Spice factor! If you don’t have all the veggies or have others I am sure that any vegetable can substitute or be added in, no problem at all. Make this easy recipe on a cold night to fill the house with warm deliciousness!

Szechuan French Green Beans

A homemade Szechuan sauce is good on anything…or even by itself! You can liven up any vegetable with this sauce and it is a great side or main dish. It covers the sweet & salty and umami to the tenth. I can’t get enough of this sauce. I make it on any veggies I have or even with just plain rice. It is super super delicious. When I made these Szechuan French Green Beans I ate the whole pan…DH had to fend for himself that night! This is a Vegetarian & a Vegan Recipe too.

I have made this too many times to count as a simple side and even when I just feel like a veggie overload. I am entering this in “House Favorites: Vegan” for this month, hosted by Claire on Chez Cayenne.
