When I hear the word “Healthy”, vegetables pop in my mind. Although healthy and good for us, vegetables are extremely delicious raw or cooked. I love to eat brussels sprouts, spinach, and broccoli. I am artichokes number one fan and don’t leave me alone with yellow squash or sweet potato, I will devour them! Some of my favorite vegetable dishes include Vindaloo, Ratatouille, Farmhouse soup, and potato salad. Use fresh produce as often as you can in recipes, frozen stuff if that is your only option to use for cooking. Pick out one of the following recipes to try tonight!

Ponzu Green StirFry - Delicious Vegan Recipe
My go to easy recipe for dinner has to be a stir-fry. I always have some veggies in the fridge; broccoli and carrots are must haves in my house. There is always a piece of ginger root hiding behind something and of course some garlic. Rice and a few bottles of condiments are always on hand as well in my pantry. So when I haven’t put any thought into what we are having for dinner, stir-fry it is! It is a healthy delicious meal. Almost always vegan & vegetarian, full of fiber and plant proteins. This time around I had some Marukan Ponzu Premium Soy Dressing with Sudachi Citrus in my pantry and decided to make a Ponzu Green Stir Fry.

Delicious Rating: I am in love with this Ponzu Dressing! It is an absolute must in your pantry and there are plenty of recipes on the Marukan site to cook up using the dressing. I balanced out the citrus with some ginger and honey. It was a nice change up to my Tofu Stir-Fry recipe adding another layer of flavor to the sauce. I only used green veggies and they were great but next time I think I will add a red bell pepper and some carrots for some color on that plate! Garlic Crab Linguine

I am all for easy recipes. And if I can make a delicious pasta dinner in under 15 minutes, then I am sold! This crab recipe does just that. In the time it takes to boil the pasta, you are done cooking the sauce. I use lump crab in this recipe and it is just a matter of heating the crab meat in the sauce and tossing in the pasta.

Delicious Rating: Butter…Garlic…Crab…Pasta…really?! Are you seriously wondering if you should cook up this recipe?! GO! Buy the ingredients and make this up for dinner tonight!!!

Cheesy, creamy, with bacon and a little bit of spice…what I wish every meal could be. Loaded Potato Skins or potato boats, as some like to call them, are the ultimate appetizer. It is a mini version of meat and potatoes but loaded with cheese. Who doesn’t want that before the actual meal? The only thing I hate about ordering potato skins from restaurants is that there is never enough bacon, or cheese, or filling. I have had some sad potato skins, I still ate them…but they were definitely sad. The only way to lift my spirits and gain a few extra pounds was to make an easy recipe that had enough bacon and cheese to make anybody smile.

Delicious Rating: OMGoodness! I didn’t want to share these at all. The first mistake when cooking something super delicious: cooking for other people. DH and I could have devoured the whole lot of these potato skins but instead shared them with company. Dang you company!

I think this recipe is perfect. Seriously. I overdid it on the cheese and the bacon so that there was no want. I used green onions for a more subtle onion taste but with some greenery. This is now my go to recipe for potato skins. I change the level of spice on the skins coating and the filling depending on my mood, as can you. Plus, this recipe is super easy and doesn’t require a lot of ingredients. Bake some up and let me know how they turned out for you!

Creamy White Chicken & Artichoke Lasagna

Creamy. Cheesy. Pasta. Chicken. Basil. Artichoke Hearts. Sun Dried Tomatoes.
What more could you want in a meal? This Lasagna is delicious, I mean, hands-down-ready-to-eat-the-whole-pan-by-myself-delicious. Plus it doesn’t require a lot of ingredients or steps which makes it an easy recipe for any day of the week.

I have always shied away from making lasagna. I remember my first attempt was a runny mess when cut into. My next few weren’t that great either. But with enough time and practice I look forward to a Lasagna night at home.

Delicious Rating: Did I mention this lasagna is delicious? Since my DH and I already love artichoke hearts and sun dried tomatoes, we are in love with this recipe. The cream cheese sauce is super creamy and doesn’t give you the ‘runny’ lasagna that sometimes happens. This is a perfect recipe with salad and some Soft & Crusty Bread. Plus, if you are stuck in a rut with traditional lasagna this is a great way to change things up. Leave a comment and let me know how it turns out for you.
