Vegan

A Vegan Diet eliminates all animal products. period. no exception. Some choose to go on a Vegan diet for ethical reasons while other adopt a vegan diet for dietary reasons. But no matter what reason you have for searching for Vegan recipes, vegan food tastes delicious! Plus, a vegan diet can be a whole lot cheaper than a regular diet. By eliminating meats, eggs, and dairy, you can save a lot of money at the grocery store. I love cooking vegan recipes and am always open to try more including desserts. Curried Rice & Chickpeas

Share

Curry is able to change a simple dish into something dynamic. I used to make a Coconut Rice dish with chickpeas and green peas. Delicious. I decided to mix things up by adding in some red curry paste and tomatoes…can you say, “More Delicious”? Yes, it turned my ordinary Rice & Peas dish into something extraordinary.

Delicious Rating: This is a great curry recipe. Again it is a one pot meal, which I am a big fan of because they are usually easy recipes to cook up for dinner. The leftovers got time to blend the flavors and give it more depth which made it taste even better the next day. If you aren’t a big fan of curry, leave it out along with the tomatoes leaving a great coconut rice dish.

Curried Bean Pilaf

Share

I am a sucker for one-pot meals. They are usually quick and easy recipes that taste great. This is a complete dish and is the star of the dinner show. Yes, you can serve it with some meat or a nice green salad too. The plus? It is a Vegan Recipe and delicious!

Delicious Rating: For a spicier meal, add more curry paste or powder. The first time around I used brown rice and since brown rice cooks a lot longer, the meal was too mushy. The second time around I used white rice and it turned out great. There is a great balance between hot from the curry, sweet from the raisins, and the perfect crunch from the pecans. Overall, it is a good meal and I plan on cooking it again!

Spicy Korean Noodle Soup

Share

Zero Carbs, Zero Calories, Zero Fat…sounds a little iffy right? Well, I am not talking about this easy recipe (although it is super healthy and full of great stuff), I am talking about the Konjac Shirataki noodles in the soup. Naturally I was skeptical when Gita over at Konjac Foods sent me some samples of their products.

The noodles boast the whole “Zero” thing and are said to be pretty good. I found that they will only really work in an Asian recipe. They didn’t just go well with Marinara or Alfredo sauce. They also smell funny when you open the package. Just rinse them a few times before using! Once rinsed they are ready to go and be eaten. The perfect recipe for the Konjac noodles is this Spicy Korean Noodle Soup.

Delicious Rating:  This soup is chock full of all kinds of yummy goodness. You have spicy that you can control to your palate level. Assorted veggies for color and healthiness. Lentils for depth of flavor and protein.  And Konja Shirataki noodles for the extra slurp down! I love this soup and the heat and Asian flavor it gives off. Try it and let me know what you think!

Vegan BBQ’d Baked Beans

Share

The best part about a Barbecue are the Baked Beans. I love the sweetness of the beans running off into the potato salad or pasta salad on the plate. Yummy! These beans may be some of the best baked beans I have ever cooked. Plus, they are Vegan!

Delicious Rating: Easy recipe to make and bake. Not too sweet at all but has a nice flavor to it. They are thick and not super saucy but if you like a lot of sauce you can double the recipe for sauce. Serve with Vegan Pasta Salad, Seitan Ribs, and Bean Burgers for a complete dish.
