A Vegan Diet eliminates all animal products. period. no exception. Some choose to go on a Vegan diet for ethical reasons while other adopt a vegan diet for dietary reasons. But no matter what reason you have for searching for Vegan recipes, vegan food tastes delicious! Plus, a vegan diet can be a whole lot cheaper than a regular diet. By eliminating meats, eggs, and dairy, you can save a lot of money at the grocery store. I love cooking vegan recipes and am always open to try more including desserts. Thick Vegan Black Bean Soup

I was trying to think of a more appealing name for this soup but the name is exactly what it is, link a thick black bean soup that happens to be vegan and delicious. It is also a very easy recipe that is cheap to cook up for dinner any day of the week.

Delicious Rating: This soup is full of healthy goodness that tastes great. I blended half of the pot with an immersion blender which gave it a better consistency for soup but still had some chunks of vegetables and beans. My DH & I really enjoyed it and it is great with some garlic crusty bread!

Guacamole

Who doesn’t love a bowl of guacamole and chips? I have tasted and made a lot of guacamole in my life time and I have to say that this guacamole recipe is by far the best guacamole ever! Like seriously, for reals. You will not regret making this for yourself, for a condiment, or party. It is an easy recipe with easy ingredients to by at the store almost anytime of year.
Delicious Rating: I literally licked the bowl clean. Like, ‘got my nose all dirty and stuff’ clean. Chunky and smooth, spicy and yet delicate enough to really taste the avocados. That sounds like perfect guac if you ask me! I always try to pick up some good ripe avocados and make guacamole to have on hand for a snack through the week. It usually lasts about 30 minutes after chilling in the fridge…hey, nobody is perfect!

Garlic & Basil Flatbread

Flatbreads are easy bread recipes for any occasion or meal. You can mix and match with different herbs or use as a pizza dough too. The options are endless. I served this flatbread with some Pasta with Avocado Cream Sauce. The flavors of garlic and basil really went perfectly with the simple pasta and this bread holds up great to clean the plate as well!

Delicious Rating: I really enjoyed this bread. It is soft and a little chewy, which I love when it comes with pasta. As I said the options are endless.  I think I will use this again for pizza dough or chop in fresh herbs when mixing the dough together. Then just bake or drizzle with a little olive oil. How do you like your flatbreads? I am open for suggestions!

Baked Ratatouille

The last time I made ratatouille, I thoroughly enjoyed it. The herbs were perfect with the vegetables used. The only thing was that I had pan cooked the veggies and they didn’t have that pretty presentation as most ratatouilles do. So this time I decided to bake up the ratatouille. It is easy enough to slice up some veggies. If you have one of those fancy madolins you can get your veggies all the same exact width for super perfect presentation.
Delicious Rating: Super good. This is an easy recipe, nothing to it. I use eggplant and always will sweat them to take out some of the bitterness. Besides that, I serve it with rice cooked with some turmeric and it tastes delicious. Will definitely cook this up again.
