Tortillas

Tortillas are a staple in Mexico. Used to make tacos, burritos, and enchiladas. There are a variety of tortillas available too. You can eat flour tortillas, yellow corn tortillas, white corn tortillas, blue corn tortillas, even whole wheat tortillas. They are available in fajita size, taco size, regular size, and large burrito size! I love flour tortillas and really prefer them over corn. But I have had meals like enchiladas where a corn tortilla is good or a whole wheat one. But burritos can only be made in the extra large flour tortillas! Homemade fresh tortillas are so good too!

Vegan Tacos

Over the past couple of years I have realized that you can really “veganize” any recipe and be left with a delicious meal. When you minus the meat and dairy and eggs, vegetables really have a chance to stand on their own and they taste great. Don’t get me wrong, I do still eat meat and dairy and eggs, I am just learning to appreciate food without them. Case and point: Tacos “veganized”. No meat, no cheese, no sour cream. Rather sauteed veggies, thick black beans, cream avocado…yum! This easy recipe was a cinch to cook for lunch with simple ingredients that were in the fridge and pantry. I highly recommend it.

Delicious Rating: I used the mini corn tortillas and ended up eating four, they were addicting and full of flavor! My DH said they were great and would have been better with some sort of rice inside too. If you want a heartier taco, I recommend adding rice, but without rice I felt they are light and filling. I had onions and squash so that is what I sauteed up. Feel free to use bell peppers, asparagus, carrots, even broccoli. Keep it simple so that you can really taste each vegetable  without muddling them together and let me know how they turned out!

Vegan Blue Corn Tortilla Tacos

Living in Mexico you would think that one would eat plenty of tacos but I hardly ever ate tacos out. You never know how clean a place is or how old are their ingredients. Plus, most tacos are soaked in grease and meat so I am already turned off. But when I am in the mood for some Ameri-Mex, DH and I love to make tacos or burritos. It is an easy recipe that is sure to always turn out great. This time we bought some fresh blue corn tortillas to make some tacos on a Saturday afternoon.

Delicious Rating: Muy rico mi amigos! This is actually my DH’s recipe but I helped! I love the spices he uses for the vegetable saute, they taste delicious. Because they are vegan there is no meat, cheese, or sour cream. You won’t be missing them either! I have found that those “extras” really mask the real ingredients and flavors. Once the “extras” aren’t there you can more appreciate the food you are eating and really taste the depth of flavor. And the avocado is super great as a creamy replacement! The blue corn tortillas taste great but I will have to go with flour next time.
