Cook Eat Delicious!


Tofu or Bean Curd is often found in Vegan and Vegetarian dishes. Used a lot in Asian cooking, it has gained wide spread popularity. I didn’t use to like tofu, it tasted of weirdness and had a gross texture. But when I tried being vegan for a few months I fell in love with it. Fried tofu is the best. I guess I needed some dimension to the texture so it was the crisp that I love! Now I eat it a lot, not just fried either. Try one of these Tofu Recipes today and let me know what you think.

Tofu Stir-Fry

I love a good stir-fry. Add in some fried tofu and OMGoodness, I am in paradise! This recipe is great with leftover vegetables and almost all the ingredients for the sauce are on hand in your pantry. Homemade Tofu Stir-fry is so much healthier and way more delicious than any restaurant could serve you. Plus, this is a Vegan & Vegetarian dish! Yay! But if you are not into that you can add as much meat to this recipe as you would like.

Delicious Rating: This meal has a few steps that can get a bit scary for a beginner cook (frying tofu, oh my!) but don’t fret, the whole meal is done in about 20 minutes. A Quick and Easy recipe right? It is the perfect lunch in my house when I am craving rice and a little spice.


Vegan Pad Thai

Peanuts are a tricky thing for me. I love Peanut Butter & Jam sandwiches. I love Peanut Butter Cookies. But when peanuts enter into the savory realm, I am not too sure about it.

For that reason I have never been fond of Pad Thai. Who wants noodles with peanuts? My DH. So since I have been on this Vegan kick, I decided to cook up some Vegan Pad Thai. Maybe this time I would enjoy it?

Delicious Rating: Nope, I didn’t enjoy it. The rating is strictly mine, as my DH thoroughly enjoyed this Pad Thai. Of course he did mention that it was different from his usually Thai restaurant fare but it was delicious at home! I had to laugh at that one. This isn’t an easy recipe, it seemed like a lot of work went into making this dish so I doubt I will make this again. Let me know where you like your favorite Pad Thai dish!


Vegan Pasta Salad

I don’t like pasta salad. I never put it on my plate at the BBQ party or in a buffet line. I mean whose to know what the creamy sauce is really made up of…old warm mayo always comes to my mind! When I had my Vegan Barbecue I was really having a difficult time wrapping my head around the idea of tofu-potato salad. But then it occurred to me to make a tofu-pasta salad. I mean, I never know what the sauce of a pasta salad is made of anyways.

Delicious Rating: This pasta was an easy recipe to cook up and tastes great! I really liked the spice from the cayenne pepper, it wasn’t dominate but you could definitely feel the kick! This is the perfect Vegan BBQ Side dish and is a keeper in my home!


Tofu Vindaloo and Rice

When we were living in Texas there was an unbelievably delicious Indian restaurant. And although I am not a buffet frequenter, we would frequent their lunch buffet often. Indian food is something I miss eating a lot! Over the last couple of months I have been trying to cook a lot of different international fare, especially vegan. So why not cook up some Indian food? I decided to make one of my favorite Indian curry dishes, Vindaloo. I veganized it up with some fried tofu to make an absolutely delicious dish.

Delicious Rating: If you don’t like the lingering smell of Indian food in your house, I suggest you open up windows and close the bedroom doors before cooking this easy recipe. Once you get that done and cook this Vindaloo recipe you will be happy you did. The flavors meld together so well. But it wasn’t until the next day that it tasted even more amazing than when it first cooked. This is definitely a keeper and will be a regular dinner in my home.
