Tacos

Tacos hail from Mexico being the most popular and simple dish. A tortilla filled with your liking, eaten with you hand…yum! During my time visiting and living in Mexico, I ran into a lot of taco stands, they are every where, on every street and on every corner! Tacos with pork, tacos with beef, tacos with chicken, tacos with cheese…wait, isn’t that a quesadilla? Any how, tacos are every where in Mexico and often delicious if eaten at the right place. Beer Battered Fish Tacos with a Spicy Cilantro Cream Sauce


With the exception of Restaurant Month last month I have been a little MIA. Not just from this blog but from the kitchen too. Once I stopped putting up recipes regularly it became a lot more difficult to even do so once in a while. I was in a funk and I am thinking I may be out of it…maybe. We just moved into a little cute apartment, closer to the water and closer to town. When I say ‘little cute’ I actually mean ‘super small, help! I can’t move around in the kitchen’ apartment. Alas! Life goes on and I gotta start cooking again sometime. Fish Tacos was the way to go and get up out of my dry cooking spell. I love fish tacos and when we lived in Mexico DH and I really got addicted to fish tacos at a little joint in our town. The fish was fresh and served in warm flour tortillas. We used to go there for lunch at least twice a week but since we moved to Costa Rica we haven’t had fish tacos at all. I think this recipe may become a regular weekly thing for us now.

Delicious Rating: Fish Tacos have never tasted so good! The beer batter is not that super thick kind that tastes mushy half way through biting it but rather it really coats the fish and fries up nicely and stays crispy too. I used Tilapia fillets and loved their flavor but you can use any firm white fish you prefer. The cream sauce…OMGoodness. Like seriously, it is pretty the bomb. I kept eating it by itself. It is spicy and has a great cilantro flavor and complements the fish very well. I used corn tortillas and they were great but next time I think I will stick to flour. Just personal preference.

Vegan Tacos

Over the past couple of years I have realized that you can really “veganize” any recipe and be left with a delicious meal. When you minus the meat and dairy and eggs, vegetables really have a chance to stand on their own and they taste great. Don’t get me wrong, I do still eat meat and dairy and eggs, I am just learning to appreciate food without them. Case and point: Tacos “veganized”. No meat, no cheese, no sour cream. Rather sauteed veggies, thick black beans, cream avocado…yum! This easy recipe was a cinch to cook for lunch with simple ingredients that were in the fridge and pantry. I highly recommend it.

Delicious Rating: I used the mini corn tortillas and ended up eating four, they were addicting and full of flavor! My DH said they were great and would have been better with some sort of rice inside too. If you want a heartier taco, I recommend adding rice, but without rice I felt they are light and filling. I had onions and squash so that is what I sauteed up. Feel free to use bell peppers, asparagus, carrots, even broccoli. Keep it simple so that you can really taste each vegetable  without muddling them together and let me know how they turned out!

Vegan Blue Corn Tortilla Tacos

Living in Mexico you would think that one would eat plenty of tacos but I hardly ever ate tacos out. You never know how clean a place is or how old are their ingredients. Plus, most tacos are soaked in grease and meat so I am already turned off. But when I am in the mood for some Ameri-Mex, DH and I love to make tacos or burritos. It is an easy recipe that is sure to always turn out great. This time we bought some fresh blue corn tortillas to make some tacos on a Saturday afternoon.

Delicious Rating: Muy rico mi amigos! This is actually my DH’s recipe but I helped! I love the spices he uses for the vegetable saute, they taste delicious. Because they are vegan there is no meat, cheese, or sour cream. You won’t be missing them either! I have found that those “extras” really mask the real ingredients and flavors. Once the “extras” aren’t there you can more appreciate the food you are eating and really taste the depth of flavor. And the avocado is super great as a creamy replacement! The blue corn tortillas taste great but I will have to go with flour next time.
