Delicious Past…


A Muffin is a single serving of bread, sweet or savory, baked for breakfast, a snack, or served with tea. I love to bake muffins. They are so perfect to serve to large groups since they are single servings of deliciousness. During the autumn and winter months when pumpkins are fresh in season, I bake up batches of pumpkin muffins and give them to friends. I once made a pumpkin spiced butter to go on top, can you say delicious?! Make muffins a lot healthier by adding in some ground flax or nuts and raisins. They will give texture and another dimension of taste and flavor.

Blueberry Muffins


I love blueberry muffins. The best blueberry muffins I have ever had was at a hospital. No hospital in particular, just a hospital. You know how they have those little eateries in the hall stocked with soup, salad, coffee and pastries, and some weird dish that doesn’t belong at the hospital like Mongolian beef…It is there that I have always found the best blueberry muffins; large & tightly wrapped in saran wrap, delicious! Alas, they don’t have those eateries filling the halls at hospitals here in Mexico so I set out to bake some great muffins at home.

Delicious Rating: I think I will stick to the Hospital’s blueberry muffins. These aren’t bad, just not what I wanted. Very easy recipe to cook though. The muffins turned out too crumbly for me, falling apart at every second. The batter was thick but the blueberries all sunk to the bottom so there wasn’t that blueberryness (yes, I know) in every bite. Next time I will try something different instead of repeating this one.



Pumpkin Spice Muffins


Pumpkin is one of my favorite desserts. Pie, discount Bread, pharm Cheesecake, view or cookies, nothing beats pumpkin. Spices like cinnamon, nutmeg, cloves, and ginger fill the air with such warm pleasantness, it is hard to want anything else! I had a couple of cans of pumpkin pie mix sitting around so I decided to bake up some muffins and a loaf of bread.

Delicious Rating: This is a simple baking easy recipe, really requiring no skills at all! Add the ingredients together, mix, pour, bake, and voila! Your done! The bread & muffins turned out wickedly moist & full of spice & deliciousness. Spreading some cinnamon butter on a warm slice is too good to describe. I definitely will bake these again. I individually wrapped the muffins tightly in saran wrap once they were completely cooled and threw them in the freezer. They thaw perfectly or nuke one muffin in the microwave for 20-30 seconds to have a warm muffin with your morning tea.
