Cupcakes

A cupcake is a small cake baked to serve one person. Individually wrapped and nicely frosted, cupcakes are one of my favorite desserts! I made these lemon cloud cupcakes before, they were a dream. I am telling you! They were a lemon batter that once baked were filled with lemon cream curd! Then, they were topped with the most airy, light, fluffy lemon frosting. It has to be the best lemon frosting I have ever made before. The worse part of the whole experience is that I had made them for company so I wasn’t able to eat as many as I would have liked!

Giant Hostess Cupcake Cake

When we used to cross the border into Texas, we almost always went to this little gas station stop outside of the border town that had a Wendy’s and Dairy Queen. We would buy so much junk at that gas station, I think the workers thought we were going into Mexico. But we had been out for so many months we needed a good ol’ junk food fix. One thing that was for sure was that my DH would buy some Hostess chocolate cupcakes. He just loves those things and inhales them in two seconds! So when we were going on a ‘junk food dry spell’ down here in Costa Rica, I decided to make some Hostess Cupcakes but bigger…and better. So a Giant Hostess Cupcake Cake was born. Imagine the chocolate cupcake times a lot…yeah, it was pretty great.

Delicious Rating: Wow, cake is just perfect Hostess cupcake consistency. I love the chocolate ganache too. Once it firms up it really looks and tastes amazing. The marshmallow filling was spot on too, especially fresh. Unfortunately, we don’t have temperature control in the house so once it warmed up just a little the consistency started to change but it still was good and worked out perfect. This chocolate layer cake is a fun and easy recipe. It is great for parties or special occasions that require a giant cupcake cake. It put a huge smile on DH’s face once I cut into it. He wasn’t expecting that middle filling at all. Cake surprises are so much fun!

Glazed Lemon Cupcake Buds

Anything Glazed. Anything Lemon. Anything Cake. My Taste Buds go crazy for. After the Lemon Raspberry bread gone wrong, I decided to go small, mini Lemon Cake Buds. And when you are small, you need extra glaze! Plus, this recipe is so easy to bake up. The bad thing is that they are small, so I end up eating 12 of them not realizing I just ate 12 mini muffins with extra glaze!

So be careful. Make these when you expect people to come over or bring them to a party. Do not make them for no occasion. You will eat them all in one sitting. I promise you that!

Delicious Rating: These are delicious without the glaze. I kept popping the little lemon suckers into my mouth as they were cooling. You can take the lemon cake bud and dip it into the glaze for a nice coating or just drizzle with a spoon. I will definitely be making this easy recipe again, for a nice spring afternoon!
