I am not a big cookie fan. Sure, clinicsee I like cookies but I am not Cookie Monster who devours every cookie in site. But these Soft & Chewy Peanut Butter Cookies I did devour. They were sooo soft and actually chewy. I love a peanut butter cookie that tastes a lot like peanut butter. Sometimes peanut butter cookies can be crunchy and hard, pilule and hardly even taste like peanut butter! These are the exact opposite and perfect for the peanut butter lover.
Delicious Rating: Oatmeal is the secret ingredient in these cookies. It really adds some depth of flavor and constitutes to the super chewiness of the cookie. This easy recipe is my only go-to for peanut butter cookies. This is the best I have made and eaten. They are just delicious! Please share your favorite peanut butter cookie recipe with me so I can compare!
I was just redirected by your Classic PB Cookie post and you’ve really made me want to bake these super chewy PB cookies now… first thing tomorrow ! 🙂
I’m really surprised by the oatmeal.. but that just makes these ‘healthier’ 🙂
Raven, they are delicious!! Made them just now…I cut out the white sugar and they were still sweet enough..next recipe I’m going to try is the refridgerator lemon cookies…thanks!!
Hi Raven, I’m making these for my Dad who’s American for Father’s Day this Sunday (here in England)! These look really superb 🙂 Did you use salted or unsalted butter? Many thanks! x
I used unsalted but salted is fine too, just leave out the extra salt. Even then sometimes I add in the salt and the recipe is never ‘salty’. I use smooth peanut butter for cookies but once used crunchy and my DH loved them! So really up to you and if you want the texture of little peanuts in the cookie!
I did not cook the oatmeal beforehand Jessica. I have baked these cookies plenty and have used quick oats or steel cut or any type and they always work great!
I love these cookies. I made some for my soldier and he loves them!! Thanks so much for the recipe. I also doubled mine. Turned out perfect!! ps. the batter was delish too!! Thanks again!
So i just finished making the dough and i could stop eating it from the bowl lol my fiance had to take it from me. He is now standing in front of the fridge guarding it from me til the fridge time is up.
Hi I made these today and the batter was great but my cookies turned out puffed. Did you just stir in the flour mixture or beat it in? Also in your photo it looks like more than a 1/2 cup of butter.
I stir in the flour mixture. Although it may look different, it is just 1/2 cup of butter! Sorry your cookies were puffy, maybe too much baking soda Beatrice?
They turned out amazing! Used 1 cup of Reeses Pb chips in the first bath.. needed more so I doubled it to
2c in the second batch. I have to say this is a little treasure to find! Thanks so much for posting this! Will be sharing recipe with friends and family! Wont be sharing cookies because they barely make it in to an airtight container..
I love cookies. I’ll take a few cookies with a glass of milk. Yum!

I made them today and by far the best and easiest recipe I have tried for cookies! Love it, it was a hit with my kids!
I am so happy Divian! Kids can be some of the hardest cookie critics!
Do you have to use brown sugar or can you just use white?
You can use all white sugar Lizbeth, but the addition of brown sugar will give it that extra chewiness and deliciousness!
Did you cook the oatmeal before hand?
I did not cook the oatmeal beforehand Jessica. I have baked these cookies plenty and have used quick oats or steel cut or any type and they always work great!

Waiting on the cold process before I bake. How large should the balls be to bake?
Also adding Reeses peanutbutter chips.
The size of a bouncy ball is good. The additive of chips sounds delish Debra!
