Lemon IceBox Cookies


Ice Box cookies are so convenient! Make the dough, freeze the dough, cut the dough, bake the dough. This recipe is a must for any lemon lover. The cookie was similar to the Lemon Raspberry Thumbprint Cookies I baked before. It is more crispy though but still retains the soft, buttery texture.

Delicious Rating: Anyone can make these cookies, such an easy recipe. Once frozen, you take out the rolled log of dough and slice up the amount of cookies you need…Easy! They taste great and the lemon is not strong at all. I think I will add a bit more lemon zest next time for a stronger flavor of lemon. The easy factor is great and when I want cookies I just have to preheat the oven and slice the dough so I definitely will make them again.

Perfect served warm with a dollop of vanilla ice cream
  • 2 cups all-purpose flour
  • 1 cup powdered sugar
  • 1 tsp salt
  • 1 tbsp of lemon zest
  • 1 tsp fresh lemon juice
  • 1 cup of softened unsalted butter (2 sticks)
  • 2 large egg yolks
  • ¼ cup granulated sugar
  1. Combine butter, lemon zest, salt, and lemon juice in a large bowl until well combined.
  2. Mix in flour, powdered sugar until combined.
  3. Then mix in eggs.
  4. Divide dough in half and form into 1½ inch-wide logs.
  5. Wrap in saran wrap or parchment paper.
  6. Freeze until firm, at least 2 hours for up to 1 month.
  7. Once ready to make cookies preheat oven to 350 degrees.
  8. Take out dough and roll in a dish of granulated sugar.
  9. Slice cookies into ¼ inch-think slices and place on a parchment lined cookie sheet.
  10. Bake for about 15 minutes or until the edges are golden brown.
  11. Transfer cookies to a wire rack and cool.

The dough will be a bit sticky but thick enough to mold into a log. Use the wax or parchment paper to do the molding.

A few times I would make this ahead of time for a few days later. I take it to my friend’s houses and bake them there. Warm cookies are always welcome!
