Cookies are small, flat treats that can be baked or not. With so many Cookie Recipes come a variety of so many types of cookies, including: Sugar cookies, Spice cookies, Chocolate cookies, Chocolate Chip cookies, Peanut Butter cookies, Butter cookies, Nut cookies, Fruit cookies, Lemon cookies, Pumpkin cookies, Oatmeal cookies, Ginger snap cookies…and the Cookie list go on and on!So what is your favorite cookie to munch on? I like a crispy cookie, like a shortbread cookie filled with a jam. Or a soft and chewy oatmeal cookie like my dad would bake when we were growing up at home.

Refreshing Lime Cooler Cookies

If lemons and limes were in a competition against each other, I would choose lemons every time, they are the clear winner especially when it comes to dessert. However, I don’t get lemons very often if at all here in Costa Rica so the next best thing are limes. You cannot simply exchange lemons for limes so I wanted to create a recipe that really showed off limes potential. These cookies are perfect for doing just that. This is an easy cookie recipe to bake up and limes really shine but don’t overwhelm.

Delicious Rating: Light and chewy and extremely addicting! These are some delicious cookies. The lime is there and since it is paired with nutmeg and cinnamon, it is distinct but is perfect with the spices. All three tastes meld together rather than trying to over take one another. The cookie is really refreshing on a hot day, a cooler cookie. I really enjoyed these and am thinking of making them when I need an acidic fruit dessert fix!

Nutella Chocolate Chip Cookies

If you haven’t tried Nutella yet, you do not know what you are missing out on. Nutella is a delicious combination of hazelnut and chocolate. That’s it! Soooooo goood with a spoon! Or in cookies too! I love to bake cookies for friends and gatherings since cookies are easy recipes and don’t require plates & forks for serving. I baked these up and they were gone every time the plate came back to the kitchen. Good thing I doubled the recipe!

Delicious Rating: These are great cookies for eating alone and maybe sharing if you feel up to it! They don’t need chocolate chips at all. I could definitely go without them and maybe next time use white chocolate chips instead? What do you think? The nutella is not as strong as I would like but you know you are eating a nutella cookie when munching them down!

Chocolate Chip Cookies

What really makes the perfect chocolate chip cookie? Crunchy on the outside but soft on the inside? Chewy all the time? Nuts? A good chocolate chip to cookie ratio? I guess it depends on the person. But I believe that anyone who loves chocolate chip cookies will love this recipe. This is the PERFECT chocolate chip cookie recipe, seriously. This easy recipe is great for an afternoon snack or storing in the fridge or freezer too.

Delicious Rating: YUM, YUM, YUM! Delicious. Like seriously, finger licking good chocolate chip cookies. I cannot believe how good these are, and this is coming from someone who honestly doesn’t care for cookies, especially chocolate chip cookies. They have a nice crisp edge to them but still soft and chewy. They don’t turn hard over time but keep that firm softness. These cookies are perfect for ice cream sandwiches as well, yup, you heard me correctly. Do no pass up trying this, you won’t regret it!

White Chocolate Chip Pumpkin Cookies

I was a bit apprehensive to make these cookies. I love anything pumpkin but never have had pumpkin cookies. But there are those cravings for pumpkin that sneak up on me so suddenly, I only have time to bake cookies. I happened to have a bag of white chocolate chips on hand and thought, “Why not?”

Delicious Rating: ”Why Yes!” is exactly what I said after eating the first cookie, okay, actually after eating spoons of the cookie dough. These are a hit and delicious. Firm and yet soft, almost like a perfect pumpkin muffin soft but with a crunchy cookie bottom. The white chocolate chips balance so perfectly with the pumpkin in this easy recipe, not over nor underwhelming at all. Next time I want to try chocolate chocolate chips, what do you think?
