Cookies are small, flat treats that can be baked or not. With so many Cookie Recipes come a variety of so many types of cookies, including: Sugar cookies, Spice cookies, Chocolate cookies, Chocolate Chip cookies, Peanut Butter cookies, Butter cookies, Nut cookies, Fruit cookies, Lemon cookies, Pumpkin cookies, Oatmeal cookies, Ginger snap cookies…and the Cookie list go on and on!So what is your favorite cookie to munch on? I like a crispy cookie, like a shortbread cookie filled with a jam. Or a soft and chewy oatmeal cookie like my dad would bake when we were growing up at home.

Puffy Peanut Butter Chocolate Chip Cookies

Puffy Peanut Butter Chocolate Chip Cookies (1) Peanut Butter and Chocolate belong together. The perfect pairing. The ideal match. Think bread & butter, toast & jam, tea & honey, PB & J…you get the picture. I am always baking up easy cookie recipes for my DH. It is his go to sweet snack at home. He loves warm cookies and an ice cold beer. Yeah, definitely different, but I still love him! Every now and then he gets on this kick about losing weight, so no more cookies. Bummer, I actually enjoy baking him cookies. So I decided to create some mini cookies. Same thing but the size is thoroughly deceiving. You think you are being ‘good’ by eating smaller cookies only to never realize you ate double the amount in regular size (insert evil laugh). Needless to say, he loved them!

Delicious Rating: I have baked and eaten a lot of peanut butter cookies in my time but these take first place. They have a nicely crisp bottom and puff up with a full warm delicious middle. The mini chocolate chips are a perfect pairing for these mini cookies. They are so addictive though because they are small. If you want bigger cookies, go for it, just adjust baking times accordingly. This cookie dough also freezes perfectly. Check out the photo guide for the easy instructions. Pinwheel Cookies

Pinwheel Cookies

No matter how unspectacular a cookie tastes, the way it looks will make it spectacular. Case and point: Pinwheel Cookies. Don’t get me wrong, these cookies are delicious. Simple vanilla and chocolate butter cookies. But there are no bells and whistles with these cookies. What makes them great is the presentation, the way they look. Pinwheels. I have made these on numerous occasions and each time everyone is wowed, I mean, they can’t believe they are eating a homemade pinwheel cookie. “You baked these at home?” If I would have just baked up simple vanilla cookies or chocolate cookies nobody would have asked me that. But make a cool looking design and wham! You got some spectacular cookies. These cookies are made from an easy recipe and are just as easy to assemble.

Delicious Rating: These are delicious butter cookies. My chocolate was perfectly balanced with the vanilla cookie but held its own as well. The cookies will have a firm bottom when baked but the insides are soft and almost, just almost, cakey cookie. But not really. I hope that makes sense!

Refreshing Lime Cooler Cookies

If lemons and limes were in a competition against each other, I would choose lemons every time, they are the clear winner especially when it comes to dessert. However, I don’t get lemons very often if at all here in Costa Rica so the next best thing are limes. You cannot simply exchange lemons for limes so I wanted to create a recipe that really showed off limes potential. These cookies are perfect for doing just that. This is an easy cookie recipe to bake up and limes really shine but don’t overwhelm.

Delicious Rating: Light and chewy and extremely addicting! These are some delicious cookies. The lime is there and since it is paired with nutmeg and cinnamon, it is distinct but is perfect with the spices. All three tastes meld together rather than trying to over take one another. The cookie is really refreshing on a hot day, a cooler cookie. I really enjoyed these and am thinking of making them when I need an acidic fruit dessert fix!

Nutella Chocolate Chip Cookies

If you haven’t tried Nutella yet, you do not know what you are missing out on.  Nutella is a delicious combination of hazelnut and chocolate. That’s it! Soooooo goood with a spoon! Or in cookies too! I love to bake cookies for friends and gatherings since cookies are easy recipes and don’t require plates & forks for serving. I baked these up and they were gone every time the plate came back to the kitchen. Good thing I doubled the recipe!

Delicious Rating: These are great cookies for eating alone and maybe sharing if you feel up to it! They don’t need chocolate chips at all. I could definitely go without them and maybe next time use white chocolate chips instead? What do you think? The nutella is not as strong as I would like but you know you are eating a nutella cookie when munching them down!
