My favorite cheesecake has to be a pumpkin cheesecake, but I also love a rich chocolate cheesecake with a fruit coulis. I never mind a lemon cheesecake, especially one with a nice thick crust and raspberries to eat with it!

Ignore the horrible photos and focus on the cheesecake. Delicious, creamy, rich cheesecake. Dreamy melt-in-your-mouth cheesecake. An easy recipe that takes absolutely no work and no oven. I love a good no bake cheesecake. No water baths to worry about or cracks in the cheesecake. Wondering if it has baked long enough or waiting hours on end for it to set and cool. Nope, none of that when dealing with a delicious No Bake Cheesecake. This is my go to recipe for when I want a light dessert that doesn’t skimp on taste and that can be easily prepared and stored in the fridge until I need it.

Delicious Rating: Always a hit when I share… I try to share this cheesecake one out of every three times I make it! Ha! I do make my own graham cracker crust but you can go the even easier route and buy the already made ones from the store which are just as good. I love the canned cherry filling on top but have used fresh strawberries when in season and they are just as delicious, of course. What do you like to top your cheesecake with? Gluten Free Mini Cheesecakes

I have the cutest Mini Cheesecake pan. It has the removable bottom to release them so easily. And out come mini cheesecakes, viagra order quiches, tadalafil or anything you want to be miniature. I have made too many types of cakes in this pan and this one is Gluten Free! My friend who has a gluten allergy was coming over and what could be easier than Gluten-Free Mini Cheesecakes? Nowadays the grocery sells almost anything for almost any diet type and gluten-free is no exception. I simply bought some Gluten Free cookies for the crust and everything else fell into place. All of my guests loved them and the crust was not different than one full of gluten.

Delicious Rating: These turned out good and fresh. They are the perfect dessert for a hot day. Just pop them out of the fridge when ready to serve. You can add melted chocolate to the batter to have chocolate cheesecake instead of vanilla or really cook them into any flavor you fancy. The only thing bad about this easy recipe is that you end up eating 12…and not really realizing you just ate half a cheesecake!


Pumpkin Cheesecake

The last three months of the year always bring about a weird sense of urgency in me. If I don’t get to a Cheesecake Factory to buy a slice of pumpkin cheesecake I feel that the year was a waste! This Year it wasn’t happening so I took things into my own hands…I decided to bake my own Pumpkin Cheesecake.

Delicious Rating: Easy recipe to make as long as you follow the directions. Don’t rush the softening of the cream cheese either. Unfortunately, I didn’t care for it. The spices were overpowering the pumpkin and the crust had a ‘wet’ texture to it that I didn’t like. My DH thought it was too sweet but a friend of mine who tried it went back for seconds so it really depends on your palate. I doubt I will ever make this cheesecake again. I will just have to make sure I get to the States next year sometime during October-December to get the Pumpkin Cheesecake I dream of…
