Cook Eat Delicious!

Sweets

Sweets make the world go round. What would life be like with no sugary baked goods…I shudder. My favorite movie scene is in the original Willy Wonka and the Chocolate Factory. When they walk into the room with all things edible, that is what pure imagination can do right? I often dream of a chocolate river in my living room. My imagination always takes me to sugar and sweets. So when I need a recipe, I am usually thinking of a dessert recipe! While all my desserts are sweets, some of the following sweets aren’t desserts, like breakfast breads or muffins!

Puffy Peanut Butter Chocolate Chip Cookies

Puffy Peanut Butter Chocolate Chip Cookies (1) Peanut Butter and Chocolate belong together. The perfect pairing. The ideal match. Think bread & butter, toast & jam, tea & honey, PB & J…you get the picture. I am always baking up easy cookie recipes for my DH. It is his go to sweet snack at home. He loves warm cookies and an ice cold beer. Yeah, definitely different, but I still love him! Every now and then he gets on this kick about losing weight, so no more cookies. Bummer, I actually enjoy baking him cookies. So I decided to create some mini cookies. Same thing but the size is thoroughly deceiving. You think you are being ‘good’ by eating smaller cookies only to never realize you ate double the amount in regular size (insert evil laugh). Needless to say, he loved them!

Delicious Rating: I have baked and eaten a lot of peanut butter cookies in my time but these take first place. They have a nicely crisp bottom and puff up with a full warm delicious middle. The mini chocolate chips are a perfect pairing for these mini cookies. They are so addictive though because they are small. If you want bigger cookies, go for it, just adjust baking times accordingly. This cookie dough also freezes perfectly. Check out the photo guide for the easy instructions. Banana Muffins

Banana MuffinsBreakfast is my lazy meal. I don’t feel like cooking anything in the morning and I am most likely running out the door anyways, so who has time for stacks of pancakes, bacon, eggs, fruit salad, and all that good stuff that I would love to eat instead of a handful of grapes? The only solution I have found are muffins. Fresh muffins, baked up on a Sunday afternoon, ready for the week. Just pop one of the mellow muffins into the microwave for a good 10 seconds and bam! You have a warm ready to go breakfast, with the handful of grapes. The easiest muffin recipe I know is for Banana Muffins. One bowl and a spatula is all you need to prepare the batter and then bake in a muffin tin. Just wait until some overly ripe bananas fall into your lap and you are good to go. Overly ripe bananas are best to use over unripe, or ripe bananas because the banana flavor is much more pronounced and the mushy gushy banana lends to a moister muffin. (Moister is a weird word if you keep saying it over & over)

Delicious Rating: Yummy yummy in my tummy. Moist, doesn’t fall apart on you, filling breakfast, and just delicious. I love how you can individually wrap them in saran or foil and freeze them. Pop them out and let the muffin come to room temp in about 5 minutes and heat up in the microwave. They taste like they came fresh out of the oven. Easy recipe, perfect for breakfast.

Triple Chocolate Fudge

Triple Chocolate Fudge (2)Chocolate. Who can resist this rich creamy delectable goodness? A melt -in-your-mouth decadent moment of pure indulgence…(shivers) That moment, that perfect moment when chocolate comes into contact with your taste buds and everything in the world stops, just for a moment, but it is in that moment that you know you cannot live without chocolate!

Okay, I will stop with all the dramatics! I love chocolate, more so in the last few years. If you are a chocolate lover than this recipe is definitely for you. Three distinct chocolates come together in perfect harmony in this easy fudge recipe. I used a 100% unsweetened chocolate, Milk Chocolate, and White Chocolate. None of them compete or overpower, rather they really do harmonize together all the while standing on their own.

Delicious Rating: Yummy – Delicious- Addictive -So Good! This easy recipe is perfect for pairing with the late night glass of wine, a sweet snack during the day, or for company and friends. I have had fudge that I do not care for but this recipe doesn’t taste ‘fake’ or ‘processed’. It is rich, so give it a try and tell me how you prefer in your chocolate fudge!

No Bake Cheesecake

No Bake Cheesecake

Ignore the horrible photos and focus on the cheesecake. Delicious, creamy, rich cheesecake. Dreamy melt-in-your-mouth cheesecake. An easy recipe that takes absolutely no work and no oven. I love a good no bake cheesecake. No water baths to worry about or cracks in the cheesecake. Wondering if it has baked long enough or waiting hours on end for it to set and cool. Nope, none of that when dealing with a delicious No Bake Cheesecake. This is my go to recipe for when I want a light dessert that doesn’t skimp on taste and that can be easily prepared and stored in the fridge until I need it.

Delicious Rating: Always a hit when I share… I try to share this cheesecake one out of every three times I make it! Ha! I do make my own graham cracker crust but you can go the even easier route and buy the already made ones from the store which are just as good. I love the canned cherry filling on top but have used fresh strawberries when in season and they are just as delicious, of course. What do you like to top your cheesecake with? Let me know so I can use it next time I make this!
