Soup

When I think of a cold winter night, I think of soup. A warm bowl of soup does the body good and a cold bowl refreshes the soul. Soup recipes are so easy and simple to cook and quick too! I love vegetable soups and also a hearty clam chowder. Although some may say that chowders and stews are not soups, I beg to differ, they fall under the same category on my food blog! When certain veggies are in season and super fresh I love to make a soup for lunch. Sometimes I will freeze half for a future meal when I don’t feel like cooking!

Split Pea Soup

I love peas. I eat peas out of the can cold…super yummy to me! About eight years ago I had my first bowl of split pea soup in New York. It was the best thing I have ever had. Like seriously, one of the best meals of my life.  And then eight years pass and I never have it again. I forgot all about Split Pea Soup until out of the blue one day my DH tells me that he loves split pea soup. “Um, since when?” I wondered, seeing that we have been married for a while and split peas have never ever been brought up into food conversations. So I decided to take a stab at it and now split pea soup is a regular easy recipe that I make at home.

Delicious Rating: This soup is delicious. My DH loves it and so do I! It is thick and hearty but at the same time it is light, not heavy and weighing you down. I love the chunks of potato and carrots. The split peas dissolve into the broth and cover each veggie in its greeness which tastes delicious. Since this is a vegan/vegetarian recipe, there is no salty ham that is often times found in a split pea soup. But believe me, you won’t miss it at all. The bowl below speaks for it self!

Thick Vegan Black Bean Soup

I was trying to think of a more appealing name for this soup but the name is exactly what it is, a thick black bean soup that happens to be vegan and delicious. It is also a very easy recipe that is cheap to cook up for dinner any day of the week.

Delicious Rating: This soup is full of healthy goodness that tastes great. I blended half of the pot with an immersion blender which gave it a better consistency for soup but still had some chunks of vegetables and beans. My DH & I really enjoyed it and it is great with some garlic crusty bread!

Tomato Soup

Soups are easy recipes to cook up any day of the week. There might be some prep with chopping vegetables but the cooking process is a cinch, just throw everything in a pot and cook for awhile. My DH loves eating soup, even in this hot Costa Rican weather. I love a good tomato soup and pair it with a grilled cheese sandwich…delicious!

Delicious Rating: This soup is delicious. It is creamy without all that extra cream. I added a little roux to make it thicker than a usually tomato soup. Serve this soup with some crusty bread or add some sharp white cheddar cheese to that crusty bread for a really unique and yummy flavor combination. This is a great recipe to cook if you have extra tomatoes or want a light lunch or appetizer to a meal.

Chunky Clam Chowder

Who doesn’t love a warm bowl of thick chunky clam chowder? Growing up in coastal towns really made me fall in love with clam chowder. The thick tender potatoes in a creamy clam soup base….yum! My DH loves clam chowder so I always try to cook up a nice pot on a windy day since we don’t get many cold days here in Costa Rica!

Delicious Rating: This easy recipe gets all the stars in my book. It is thick and chunky. The clams are abundant and the chowder base is creamy and not thin at all. I add bacon to just have bacon! And since when was bacon and seafood and potatoes a bad combination? This is by far my favorite and the best clam chowder recipe I have ever cooked up. Let me know what you think of it!
