Cook Eat Delicious!

Wheat Meat…wheat gluten…Seitan! Yay for Vegan and Vegetarian diets! Seitan is wheat gluten made into a meat substitute that tastes delicious. Our Seitan Recipes are sure to have you wanting more. It is so crazy how it can mimic the texture of meat so closely that you would never know you weren’t eating meat. Since Seitan is pure wheat gluten, it is off limits for those who are following a gluten free diet. Try Seitan as ribs, burgers, crumbles, pork chops, pulled ‘pork’, and even sausage. I have been pleasantly surprised with how seitan has turned out in these easy recipes.

BBQ Pulled Seitan Sandwich

You read the title correctly. This is a recipe for Barbecued Pulled Seitan Sandwiches. No, not pulled pork, but pulled seitan. Can you really substitute meat? My DH would say no, although we have been eating seitan in different recipes for awhile now. But can you replace something like pulled pork? I mean come on…it is succulent pork we are talking about! Yes, we can…and it tastes just as delicious.
Delicious Rating: I think most wouldn’t know that this recipe had a meat substitute in it. Altogether, the sandwich comes together so well in this easy recipe. Browning and adding some crispy edges to the seitan really gives it the “meaty” touch. But with the BBQ sauce and coleslaw, I doubt you are really thinking about what you are eating, you are just thinking about eating it because it smells and taste delicious! What is your favorite Seitan recipe?

Vegetable Biscuit Cobbler

Warm one-dish-meals are perfect for a busy winter day. Like a pot-pie, a vegetable cobbler creates a warm comfort food. I love biscuits and I love veggies, so why not put them together with a decadent sauce…and eat on the couch…

This is a vegetarian dish. You can make it vegan by swapping out the butter with vegan margarine. I used seitan and it was a great addition but not needed. If you want meat meat, please feel free to add it in. Just want the veggies? It will taste delicious as well!

Delicious Rating: Delicious, Delicious, Delicious. I will definitely make this a lot more in the future. No changes necessary for me. The vegetables stand out on their own and meld deliciously in the creamy sauce. The biscuit is divine. Crunchy crust with a soft warm inside…My mouth is seriously salivating writing this. This easy recipe has a lot of steps but is worth the wait.

While doing my vegetarian/vegan stint, people would ask the same question…”Where do you get your protein?” There is a common misconception that protein is only found in meat. But really there are plenty of sources to gain protein from besides meat: veggies, carbs, legumes, soy products, tempeh, and seitan. Yes, seitan (pronounced say-tan but I like to call it see-tin). What is seitan? Wheat Gluten. Seitan is available already made and shaped into fancy ‘wheat meat’ items. However, you can buy it in its most natural form, wheat gluten flour, and make your own wheat meat, seitan. It is a lot cheaper to and you can really adjust it according to your recipe.

Delicious Rating: Seitan turns out ugly when you cook it. For that reason I added the little comic instead of the photo, so as not to scare anyone off of this site! This is a really easy recipe for making seitan. I don’t think I can eat seitan by itself. The texture is too spongy and there is a aftertaste I don’t really care for. But when cooked with different food, like in a pot pie or barbecued (check out my BBQ Seitan Ribs) the taste is much better and provides plenty of protein. How do you like your seitan? Please let me know after the jump!

Barbecued Seitan Ribs & BBQ Sauce

Finger licking good Barbecue Ribs! Oh, and these are Vegan Ribs! Who would’ve thought, right?! I have been curious about Seitan and wondered what it tastes like really. I didn’t think I would be able to find any in my town here in Mexico but I gave it a shot and yes! Vital Wheat Gluten (Seitan) is available at a little health food store not too far away. So first things first, we have to barbecue this stuff up. I mean you can throw anything on a charcoal grill and it will taste good.

Cooking these up require some baking time and then a little grilling time. The anticipation was killing me. As soon as they were off the grill I took a piece of the corner rib and popped it in my mouth. Haw…Hawhaa…HOT! I basically burned my mouth insides pretty bad! Don’t do that ladies and gentlemen, wait for the food to cool.

Delicious Rating: So how do they taste? Like rib meat! Believe it not, I am serious. Rib meat without the bone. The second time I made these for a BBQ with some friends. One thought that they were actually ribs and I had taken the bones out! I think grilling them over charcoal really infuses that deep BBQ taste. Plus, the sauce was super delicious so nobody was thinking that it wasn’t real meat. So I like seitan ribs! I am excited to cook more with this vital wheat gluten and share my delicious (hopefully) easy recipes with you!
