Sauce

Sauces are essential in cuisine from the world over. A sauce is a liquid or semi-solid food that is used in cooking foods or served on top of. They are a complement and sometimes the star of a dish. Sauce can be used in any meal. Use a thick sauce, syrup, for pancakes in the morning. Or try a nice balsamic vinaigrette dressing sauce on a lunch salad. For dinner, eat a yummy freshly prepared pesto sauce on pasta. Finish the day with a warm raspberry coulis sauce to cut the rich chocolate of your slice of cake. Delicious, right?

Tritip and Chimichurri Sauce (1)
Some years ago my DH and I were vegan. It lasted for nine months and we loved it. The reason we gave it up isn’t clear in my mind but I know it has something to do with steak…melt in your mouth beef. We are working towards veganism again but it is easy recipes like this Tri-tip and chimichurri sauce that make me want to keep the meat in the diet. Tri-tip is one of my favorite cuts of beef. When not over cooked, it melts in your mouth and it full of flavor. Plus, if you have any leftovers, they are great sliced thin for a tri-tip bbq sandwich the next day!

Delicious Rating: Some people tell you it is a sin to cook a tri-tip in the oven. That’s because they have never had a deliciously oven cooked tri-tip. This recipe cooks the tri-tip in the oven. If you don’t have a grill or just like oven cooking then this recipe is perfect for you. I baked some sweet potatoes at the same time and included some veggies in the dutch oven to cook along with the tri-tip. It is the perfect dinner to make and the chimichurri sauce is an excellent addition. Just blend everything up in a food processor and voila! Gingered Peanut Sauce

Gingered Peanut Sauce This really looks like nothing but believe me when I say that it is some of the best sauce I have ever made and eaten in my life! Over-exaggeration? Hardly. This stuff is really good and to top it off it is a quick and easy recipe with almost all things on hand in your pantry and fridge.

Delicious Rating: I love this sauce. I eat it by the spoon usually for awhile until I realize it goes with the rest of dinner. Pair the sauce with pasta, spring rolls, chicken…whatever you want to put a peanut ginger sauce with, do it. I have another recipe for a spicy peanut sauce (I can’t find it of course) but you can totally spice this sauce up by adding in some chili flakes before blending. Beer Battered Fish Tacos with a Spicy Cilantro Cream Sauce


With the exception of Restaurant Month last month I have been a little MIA. Not just from this blog but from the kitchen too. Once I stopped putting up recipes regularly it became a lot more difficult to even do so once in a while. I was in a funk and I am thinking I may be out of it…maybe. We just moved into a little cute apartment, closer to the water and closer to town. When I say ‘little cute’ I actually mean ‘super small, help! I can’t move around in the kitchen’ apartment. Alas! Life goes on and I gotta start cooking again sometime. Fish Tacos was the way to go and get up out of my dry cooking spell. I love fish tacos and when we lived in Mexico DH and I really got addicted to fish tacos at a little joint in our town. The fish was fresh and served in warm flour tortillas. We used to go there for lunch at least twice a week but since we moved to Costa Rica we haven’t had fish tacos at all. I think this recipe may become a regular weekly thing for us now.

Delicious Rating: Fish Tacos have never tasted so good! The beer batter is not that super thick kind that tastes mushy half way through biting it but rather it really coats the fish and fries up nicely and stays crispy too. I used Tilapia fillets and loved their flavor but you can use any firm white fish you prefer. The cream sauce…OMGoodness. Like seriously, it is pretty the bomb. I kept eating it by itself. It is spicy and has a great cilantro flavor and complements the fish very well. I used corn tortillas and they were great but next time I think I will stick to flour. Just personal preference.

Guacamole

Who doesn’t love a bowl of guacamole and chips? I have tasted and made a lot of guacamole in my life time and I have to say that this guacamole recipe is by far the best guacamole ever! Like seriously, for reals. You will not regret making this for yourself, for a condiment, or party. It is an easy recipe with easy ingredients to by at the store almost anytime of year.
Delicious Rating: I literally licked the bowl clean. Like, ‘got my nose all dirty and stuff’ clean. Chunky and smooth, spicy and yet delicate enough to really taste the avocados. That sounds like perfect guac if you ask me! I always try to pick up some good ripe avocados and make guacamole to have on hand for a snack through the week. It usually lasts about 30 minutes after chilling in the fridge…hey, nobody is perfect!
