Red Velvet Cake

Who can refuse a moist, chocolatey (I know it isn’t a word but you know what I mean) slice of cake, smothered in a cream cheese frosting? I know I can”t. But for the life of me I don’t know why I always passed up red velvet cake at dinner parties. I really just didn’t know that it was chocolate cake colored red. Why color it red? Who knows, but once I was finally coaxed into eating it, I loved it.

So for cake’s sake and mine, I had to make a red velvet cake at home and make sure the recipe was easy enough to want to make it again and again. The secret to this perfectly moist cake is the white vinegar and buttermilk. The crumb is perfect, soft, melt in your mouth yummy…you won’t want another recipe for red velvet cake ever again. Don’t want a red cake? Leave out the food coloring for a just as delicious chocolate cake.

Delicious Rating: I have made this recipe a few times now and love it more and more each time. It is the perfect layer cake and works wonderfully as cupcakes as well. Each time this is served it is gone, none left over what so ever. I used just a basic cream cheese frosting, you can use your favorite recipe or if you prefer the cake alone, it would be perfect with ice cream too. There is 1/2 cup of hot coffee in the recipe that really enhances the chocolate and you mustn’t leave it out! If you give this a bake let me know how you enjoyed it.

Beer Battered Fish Tacos with a Spicy Cilantro Cream Sauce


With the exception of Restaurant Month last month I have been a little MIA. Not just from this blog but from the kitchen too. Once I stopped putting up recipes regularly it became a lot more difficult to even do so once in a while. I was in a funk and I am thinking I may be out of it…maybe. We just moved into a little cute apartment, closer to the water and closer to town. When I say ‘little cute’ I actually mean ‘super small, help! I can’t move around in the kitchen’ apartment. Alas! Life goes on and I gotta start cooking again sometime. Fish Tacos was the way to go and get up out of my dry cooking spell. I love fish tacos and when we lived in Mexico DH and I really got addicted to fish tacos at a little joint in our town. The fish was fresh and served in warm flour tortillas. We used to go there for lunch at least twice a week but since we moved to Costa Rica we haven’t had fish tacos at all. I think this recipe may become a regular weekly thing for us now.

Delicious Rating: Fish Tacos have never tasted so good! The beer batter is not that super thick kind that tastes mushy half way through biting it but rather it really coats the fish and fries up nicely and stays crispy too. I used Tilapia fillets and loved their flavor but you can use any firm white fish you prefer. The cream sauce…OMGoodness. Like seriously, it is pretty the bomb. I kept eating it by itself. It is spicy and has a great cilantro flavor and complements the fish very well. I used corn tortillas and they were great but next time I think I will stick to flour. Just personal preference.

In-N-Out Double Double Animal Style

No, I did not eat all of these burgers…I mean I could have and certainly wanted to but I split the box with my DH and it was delicious. I love love love In-N-Out. It is usually one of our first stops off the plane when we go home for a visit. You see those thick slice of cheese? The Animal Style spread in between the juicy hamburger patties? You see it? You want to eat it? I know I do! But being 4,000 miles away can get a bit expensive to just go get a burger every time I want one. The next best solution is to cook one up myself and I think I have done a pretty good job, who can say that they had the best copycat In-N-Out Double Double Animal Style in Costa Rica?
