Nuts

The list of nuts can go on forever. Peanuts, pecans, walnuts, almonds, pistachios, cashews, macadamia, and the list goes on and on. And although most ‘nuts’ as we know them are not really nuts at all, they are each delicious none-the-less. Nuts are perfect in breakfast breads or muffins. They go great as nut butters in a sandwich or on toast. I love to add nuts in different cake batters or in cookies too! What is your favorite nut recipe? Soft & Chewy Peanut Butter Cookies

I am not a big cookie fan. Sure, I like cookies but I am not Cookie Monster who devours every cookie in site. But these Soft & Chewy Peanut Butter Cookies I did devour. They were sooo soft and actually chewy. I love a peanut butter cookie that tastes a lot like peanut butter. Sometimes peanut butter cookies can be crunchy and hard, and hardly even taste like peanut butter! These are the exact opposite and perfect for the peanut butter lover.

Delicious Rating: Oatmeal is the secret ingredient in these cookies. It really adds some depth of flavor and constitutes to the super chewiness of the cookie. This easy recipe is my only go-to for peanut butter cookies. This is the best I have made and eaten. They are just delicious! Pecan Coffee Cake

Coffee cakes are perfect for baking on any occasion. Breakfast, Brunch, Dessert, a gift, or even just to fill your home with a wonderful scent of baked bread.This is by far one of the best Coffee Cakes that I have ever eaten. It is a perfect balance of cake/bread and gooey goodness. It was almost reminiscent of a cinnamon roll, the middle had to be the best part! I also ate a slice with some vanilla ice cream which made it more dessert. But feel free to enjoy this with your morning cup of coffee as well.

Delicious Rating: This is a yeast bread so it involves a little skill of working it just right but once you have it down it becomes an easy recipe to bake up. Adding too much flour could be detrimental to the bread. However I doubt this Pecan Coffee Cake could turn out bad at all. It was delicious. I used a strawberry jam but you can change it to apple, apricot, or any other berry you like. You will not want to share this once it is out of the oven but if you do your friends will be raving and want the recipe for sure!

Szechuan Peanut Pasta

A Pasta that can be served at room temperature is known as a Pasta Salad. They are great for picnics or barbecues. If you are a working mom, pasta salads are great to make ahead of a busy day and serve for dinner. I made this on a very hot day and it worked out great to eat out on the patio. If you like peanut butter then this recipe is definitely for you. The heat is kicked up with red pepper flakes so if that isn’t for you, please omit! What is great is that this can be served for all your vegetarian or vegan friends and it is delicious even for carnivores. Yay for Vegetarian & Vegan Recipes!

This recipe comes from “The Good Housekeeping Step-by-Step Cookbook.” My Dad gave me this cookbook after I got married. It has become my favorite of the few cookbooks that I own. Every recipe that I want to cook has been dog-eared or bookmarked with a post-it. Others that I have cooked have notes and food stains all over! So this Szechuan Peanut Pasta is one of my “Bookmarked Recipes” and perfect for the challenge of the same name hosted by Jacqueline from Tinned Tomatoes and Ruth’s Kitchen Experiments is the Challenge founder!

It is also going to be sent into Anamika at the “Taste Junction” for her event “Drive Me Nuts”! This is my 3rd & 4th food blog event! Yay!

Delicious Rating: A very simple and easy dinner this is. You can use leftover pasta as well to use it up. The sauce is delicious! It is creamy, spicy, and salty all together. Don’t overcook the snow peas. The crunch gives such great texture to the pasta and sauce. As it sits the sauce does get a bit too creamy. If this happens to you add 1/4 cup of pasta water or any hot water and stir. The sauce will loosen up and it will be easy to serve. I really liked this pasta salad. I plan on making this easy recipe again in the future.

Peanut Butter Chocolate Chip Cookies

I love hot-fresh-out-of-the-oven cookies. I love them so much that I usually burn my tongue trying to eat one, literally right out of the oven. The other night DH (Dear Hubby) and I were wanting something sweet to eat and quick. What’s better than fresh baked cookies to get you over your sugar craving? I decided on Peanut Butter Cookies with Chocolate Chips. Perfect combination, great with milk, what could go wrong?

Delicious Rating: An easy recipe to cook, as most cookies are. As for the cookie, I didn’t really care for them. It was not peanut buttery nor chocolate chippy. I even doubled the amount of peanut butter so that it would stand out but to no avail. The combination did not mesh, it felt forced almost. They turned out thin and chewy, which is how I like my cookies…just not these. Overall these won’t be made by me again. DH did enjoy them but did say they lacked the peanut butter flavor. Give it a bake and share how they turned out.
