Eritrean Chicken

It is a good thing to try new foods. You are able to experience new taste buds going off in your mouth and it really can help broaden your palate sensors. I made a new friend in Costa Rica a few months ago, she is from Eritrea. She brought a lot of spices from home to have during her stay here. One dish she would often cook is a spicy Eritrean Chicken dish. It is loaded with flavor and spices that aren’t as familiar to me as others are. After she left, she gave me a bag of Eritrean Spice, deep red in color and a mixture of many different spices. I did my best to recreate her East African meal, this is what I came up with!

Delicious Rating: I don’t know if this makes any sense and I hope it doesn’t sound horribly horrible (not my intention at all) but as this was cooking it super smelled Africany (*not a word). It also tasted like it was from Africa so I was feeling pretty good like I nailed it! But it was really the mix of spices that I had, nothing on my part. The combination of tomatoes with the boiled down onions is really something to taste up against the spiciness and depth of the Eritrean spices. Really flavorful and a very delicious easy recipe & meal!

Filipino Chicken Adobo

One of my favorite Filipino dishes is Chicken Adobo. A simple dish that goes with rice and tastes delicious. This easy recipes is a must when I go home and meet up with the family. Slow cooked with the chicken falling off the bone…oh man! My mouth is watering right now!

Delicious Rating: Hello food goodness! For me chicken adobo is almost like a comfort food that I could eat while snuggled in a blanket on the couch watching a movie. All the flavors meld so well to give it such a delicious flavor and the chicken is so tender, decease juicy, price and falls right off the bone. The brown sugar cuts the vinegar and also thickens up the sauce while the bay leaves add that hint of herbs on the palate. Serve over rice for a different dinner recipe that your family is sure to enjoy!

Chicken Parmigiana

Who can resist pasta, meat, sauce, and cheese? I know I can’t and that is why I love a good Chicken Parmigiana. There are many ways to make Chicken Parmigiana and some recipes call for the frying method. If I don’t have to fry I won’t. This is a baked recipe and works out great to cut some fat and I can also prepare a salad or the pasta while the chicken is baking. Which makes it an easy recipe for me and my kitchen!

Delicious Rating: Great dinner for any day of the week. It is simple enough for kids but loaded with flavor for adults. I used my Homemade Marinara Sauce recipe for this but you can use your favorite red pasta sauce too. Serve with a salad and bread for a complete meal.

Stuffed Chicken Breasts

 Anything stuffed is a plus in my home. Anything cheesy is a plus in my home. Anything crispy is a plus in my home…you get the point. Chicken breasts stuffed with ham & cheese and baked to crisp perfection, well, it is delicious. I like to use this dish when I have a lot of leftovers. The ham was thick slices from a honey ham I recently baked. There is always some sort of cheese in the fridge and chicken in the freezer. This was perfect served with a side of rice and spinach but anything you have on hand will do.

Delicious Rating: I remember the first time I stuffed & rolled a flank steak it felt so intimidating to me to do such a large feat! It turned out great and there wasn’t really anything to it. Likewise, don’t be intimidated when cooking up a recipe that is not in your usual cooking repertoire. You will find that this is a delicious easy recipe where you can combine different meats or cheeses to stuff your chicken with creating a new dinner dish! Let me know what you try!
