Try our Beans and Cornbread for a one dish wonder cooked easy in a crock pot. I love cooking lentils because they don’t require any soaking time and can be easily cooked in twenty to thirty minutes. Fettuccine & Lentil Sauce

I know. I have said it countless times before. I love Pasta. I could die after eating any pasta with any sauce. Like Seriously, For Reals.

This is a very delicious pasta recipe that is Vegan! Yay! I wanted more protein and fiber in some of my vegan dishes and decided to sneak in some lentils in easy recipes like pasta & sauce. It isn’t really sneaking in lentils if they are the star of the show but you know what I mean!

Delicious Rating: Yummy Yummy time right here! Easy recipe to cook and delicious to eat. The lentils add such a depth of flavor in the sauce that I haven’t had in even the meatiest tomato sauce. For me pasta is super addicting to eat so if you are truly a pasta lover you will find this dish gone before you know it! Add in parsley while the sauce is simmering for an extra spice and flavor.

Grilled Vegan Bean Burger

Sorry but I had to bite into this burger. I mean look at it. Doesn’t it look good? Imagine it just came off the charcoal grill and smells delicious. Could you wait to take a bite?

And yes, you read the title correctly. This is a Vegan Bean Burger. Bean burger. I know.

I had an all out Vegan BBQ for one of the NBA final games. Seitan ribs, baked beans, vegan pasta salad, and these burgers. All Vegan. It was quite interesting but great with all the different flavors and textures.

Delicious Rating: This is an easy recipe that can be cooked ahead of time if you wish. If you love to grill and you are looking for a vegan/vegetarian burger, try this. You certainly wouldn’t be missing the real thing. Grilling infuses the great charcoal taste that I love into the bean patty and it has a nice crisp exterior while the inside is a bit beany. The taste is great but the texture gets a bit ‘mashed bean’ halfway through. I think next time I will make them a little thinner and possibly add some wheat gluten to it for more texture. Other than that, these Vegan burgers are a go. I definitely recommend them to any vegan, vegetarian, or one looking for a different meat alternative.

Hot & Spicy Lentil Soup

There has been a lot of changes to my diet and eating habits over the last few month. More fruits & veggies, less junk & processed food, portion control…you know, those sort of things. But I also have been trying to utilize food I have already at home to create a delicious meal. I succeeded with the Hot & Spicy Lentil Soup. I love soup and my DH loves soup as well. Something about eating hot soup in hot weather really is refreshing. This delicious dish of mine is being shared in my 2nd (yes, I am going to count) food blog event! “My Legume Love Affair” is organized by The Well-Seasoned Cook and hosted this month by Kannada Cuisine. How exciting!

Delicious Rating: This easy recipe meal anyone can cook, from beginner to top chef. The spices will fill your home with such a wonderfully delicious aroma that you will want to cook it again. Some of the spices are Indian based but the soup didn’t really taste Indian at all. Reduce the Cayenne Pepper and cut out the serranos for a more mild but flavorful soup.

Barbecue Baked Beans

You cannot have a barbecue without baked beans. I love to place my baked beans right next to my side of potato salad. The thick sweet sauce of the beans runs into the creaminess of the potato salad…Yum! What a combination!

Although I am not against a good can of Bush’s Baked Beans, I do occasionally make my own. Since we have been down here in Mexico it is my only choice since canned baked beans are not available!

Delicious Rating: The beans turned out delicious. This easy recipe cooks up a thick sauce that is sweet and tangy. The pieces of bacon add the right amount of smoked saltiness. The recipe is easy and can be adjusted according to your taste. I will definitely cook these again.
