Beans

Full of fiber & protein, Beans are an excellent healthy choice to eat. Use beans in salsas to spice things up with Mexican dishes. Add beans in salads to make them more hearty. Put beans in your favorite vegetable soups to add another dimension of flavor and texture. No matter what you do with beans no doubt it won’t hurt as much plus you get those wonderful health benefits that beans provide us with. Thick Vegan Black Bean Soup

I was trying to think of a more appealing name for this soup but the name is exactly what it is, a thick black bean soup that happens to be vegan and delicious. It is also a very easy recipe that is cheap to cook up for dinner any day of the week.

Delicious Rating: This soup is full of healthy goodness that tastes great. I blended half of the pot with an immersion blender which gave it a better consistency for soup but still had some chunks of vegetables and beans. My DH & I really enjoyed it and it is great with some garlic crusty bread!

Curried Bean Pilaf

 I am a sucker for one-pot meals. They are usually quick and easy recipes that taste great. This is a complete dish and is the star of the dinner show. Yes, you can serve it with some meat or a nice green salad too. The plus? It is a Vegan Recipe and delicious!

Delicious Rating: For a spicier meal, add more curry paste or powder. The first time around I used brown rice and since brown rice cooks a lot longer, the meal was too mushy. The second time around I used white rice and it turned out great. There is a great balance between hot from the curry, sweet from the raisins, and the perfect crunch from the pecans. Overall, it is a good meal and I plan on cooking it again!

Vegan BBQ’d Baked Beans

The best part about a Barbecue are the Baked Beans. I love the sweetness of the beans running off into the potato salad or pasta salad on the plate. Yummy! These beans may be some of the best baked beans I have ever cooked. Plus, they are Vegan!

Delicious Rating: Easy recipe to make and bake. Not too sweet at all but has a nice flavor to it. They are thick and not super saucy but if you like a lot of sauce you can double the recipe for sauce. Serve with Vegan Pasta Salad, Seitan Ribs, and Bean Burgers for a complete dish.

Cilantro Polenta & Bean Salsa

When I was watching one of the many season of Top Chef I started getting curious about Polenta. It seemed that every chef on the show would cook with it in one challenge or another. I just assumed I would never find Polenta here in Mexico but sure enough there it was at the grocery store. It is exciting to cook with a new ingredient, something you may never have even eaten before. I felt like I was on a Top Chef quickfire challenge and I had to think of something fast! This Polenta Recipe came to mind…but not as fast as those chefs think up easy recipes.

Delicious Rating: If you are not using quick cooking polenta make sure you continue to whisk and whisk hard! If you are not a cilantro fan than this recipe may not be for you. It is geared up with cilantro and some spiciness from the peppers in the salsa. I have to say that it was good and different. I really didn’t know what to expect. My DH enjoyed it and asked for me to make it again one day. I will for him but not for myself. It just didn’t do anything for my palate. Let me know what you think in the comment section!
