Pasta, Pizza, Polenta, Potatoes…and the list for Italian Food is endless. Using simple recipes and high quality ingredients, Italian Food Recipes are delicious and a must in any home. I make homemade personal pizzas often and top with fresh mozzarella, basil, and tomatoes. My homemade marinara sauce is one of my favorite Italian dishes and I am new at cooking polenta but I am enjoying it very much! Pesto pasta is also a favorite Italian dish in our home, my mouth waters when preparing pesto, when it is on hot pasta. What is your favorite Italian dish to prepare and eat?

 I have never been a huge fan of meatballs. What is so appealing about a ball of meat?

We were having friends over for some Italian food and I wanted to cook an easy meat dish. What better than baked meatballs? This meatball recipe is super easy, hospital after you get hands deep into the meat! I could spend most of my time on the other dishes while these baked up to perfection in my mini muffin pan.

Delicious Rating: Like I said, super easy recipe. I used pork, chicken, and beef for a moist combination. Threw in some spinach for a visual effect, plus a little spinach never hurt anybody. These are delicious meatballs that go perfect with with Spaghetti Marinara or any other Italian sauce dish.

Spaghetti Marinara

I love pasta and I love spaghetti. Correction. I love my spaghetti. Not to sound spaghetti snobbish but I am just really picky when it comes to spaghetti and types of sauce. I am not a fan of that jar stuff (although I really used to be) and I don’t like a sauce that is way too complicated and overdone with spices and ingredients. I love a simple marinara sauce on my spaghetti. This has got to be the best Spaghetti Marinara ever, truly, seriously, for reals!

Delicious Rating: This is a super Easy Spaghetti Marinara Recipe. Absolutely Delicious. It is a vegan and vegetarian recipe, super healthy but packed full of flavor. It is a thick sauce, not runny or watery at all. Let me know your favorite Marinara Recipe so I can compare!

Layered Eggplant Parmesan

Eggplant has never been one of my favorite vegetables…I mean fruits…but we will keep it as a vegetable for now. Maybe it was mental, I mean who really wants to eat a fat purple thing? I remember when I was around 22 years old we went out to this Thai restaurant with friends and did a family style thing. Spicy Eggplant was ordered and looked terrible when it arrived at the table. “Oh, you just have to try the eggplant, it is the best” they said. Well, I tried, I liked, I ate more. But I never had eggplant again for years after that and the next experience was horrible (another time we can delve into that). So when I wanted to cook up some Chicken Parmigiana but the chicken was looking suspicious at the store, I went for the eggplant. When I did my vegan stint I always read recipes about eggplant as a meat substitute. I thought, why not?

Delicious Rating: Why did I wait so long?! Somebody should have/could have told me that this fat purple thing can be utterly delicious when cooked just right! I went double on the cheese because anything is great with cheese but the eggplant really stood alone as delicious. I served the eggplant parmesan on spaghetti noodles but you can easily serve it alone with salad and bread. Or include the pasta and keep the salad and bread too. Part of the success of the meal really depends on the sauce you use. I used my easy classic marinara sauce recipe but if you don’t have the time, you are more than welcome to use your favorite jarred red sauce. This easy recipe is definitely a keeper!

Creamy Fregola Sarda Pudding w/ Saffron Vanilla Bean Syrup

A warm dessert is one of my favorite things. A warm pudding? Definitely high on the list! Creamy and full of flavor, puddings can be a delicious comfort dessert. Fregola Sarda is a great nutty pasta that is the perfect component in a pudding. And who wouldn’t love pasta as dessert?!

Delicious Rating: This pudding is creamy with the perfect blend of vanilla bean to really kick it off. I almost ate the entire bowl when it was cooling down…so good! The pasta was soft but not mushy and it held in so much flavor. The syrup is a smooth concoction of saffron threads, vanilla bean, cinnamon, and lemon zest. It adds a lot more sweetness to the pudding and the hit of citrus, saffron, and vanilla give it a little extra something something. This is an easy recipe and the perfect dessert for any occasion, I will definitely cook it up again.
