Cook Eat Delicious!


Yum…Fresh Basil! The aroma of Recipes using Basil are quite delicious. Basil can be added to almost any Recipe to create a meal full of flavor. Whether it be on top of pizza with mozzarella and roma tomatoes or freshly chopped into a homemade marinara sauce, basil is a great addition to any meal. Add it into desserts too, for a play on sweet that you will definitely enjoy. There is a variety of basil available so try different types with different recipes to get to know it better. Check out the following recipes with basil to help you cook a delicious meal.

Garlic & Basil Flatbread

Flatbreads are easy bread recipes for any occasion or meal. You can mix and match with different herbs or use as a pizza dough too. The options are endless. I served this flatbread with some Pasta with Avocado Cream Sauce. The flavors of garlic and basil really went perfectly with the simple pasta and this bread holds up great to clean the plate as well!

Delicious Rating: I really enjoyed this bread. It is soft and a little chewy, which I love when it comes with pasta. As I said the options are endless.  I think I will use this again for pizza dough or chop in fresh herbs when mixing the dough together. Then just bake or drizzle with a little olive oil. How do you like your flatbreads? I am open for suggestions!


Tomato Basil Soup

Soups are the quintessential staple in food history. They are cheap and easy to cook up. Comforting on a cold day and perfect to start a multiple course meal. My DH loves soup. Whether hot or cold, search smooth or chunky, here he always tends to give me a standing ovation for the ones I cook! I always try to cook soup on one of my busy days during the week. They are just so easy and you can always double the batch and freeze for another time. Pureed soups are rich and creamy (without the cream) so combining flavors that go together are a must. Tomato & Basil are fraternal twins, search so different but they ultimately are a perfect pair.

This is also a great healthy dish. It is full of veggies and all of their great benefits, plus it is Vegan & Vegetarian! If you make this a night or two before, you can put into a thermos or microwaveable container and take to work!

Delicious Rating: This easy recipe for soup can be made by a beginner…I hope. The steps are so easy: chop, boil, blend, boil! What could go wrong? If you are a true tomato & basil lover than this soup is for you. I think I would add cream or some sort of dairy to it next time for a different flavor but that is my own personal preference. My DH enjoyed it and said it was better than all those canned soups he grew up eating! I served this Tomato Basil soup with some french bread but would also go great with a grilled cheese sandwich!


Roasted Tomato & Basil Tart

Savory tarts are an all in one meal. Eggs, milk, and cheese come together in a flaky crust to create a delicious meal served warm or at room temperature.  You can customize them to be perfect for breakfast, brunch, and dinner. This Tart recipe combines two ingredients that were meant for each other: Tomatoes & Basil. What could possibly go wrong with this?

Delicious Rating: I rated this for a  master chef just because of the crust. Homemade crust takes time to perfect although it can be a simple thing for most people. The tart smells delicious while baking but the taste didn’t take a stand when served. It was just Okay, not delicious. I don’t think I will cook this particular not so easy recipe again. But if this seems like something you may enjoy please cook it and let me know what you thought!

Vegetable Fritters & Basil Cream Sauce

Spring has been upon us and vegetables are in abundance. Since I have been slowly inching towards a vegan diet, I have been doing a lot of experimenting with vegetarian dishes. Pan fried vegetables sounds healthy enough, I mean it isn’t actually deep fried. And of course nothing fried can ever go wrong, right? Wrong. While the idea of a crispy vegetable fritter sounds good, the execution didn’t quite make it.

Delicious Rating: Easy recipe to make as long as you follow the very simple directions of shredding, mixing, and frying. These fritters just didn’t do anything for my palate. The Basil cream dipping sauce was great but overall I wasn’t satisfied with the meal. I expected something else to come out of something fried! I doubt I will make this dish again. I served it with some leftover rice and it did do a bit better when coupled with the rice but then I could have just stir-fried my vegetables instead. Also the batter began to turn soggy fast after it was fried. You might have more success with the recipe, so let me know how it turns out.
