Grains

Grains take form in a variety of foods and are essential to a well balanced diet. Corn, wheat, oats, rye, barley, rice, and quinoa are some of the most popular grains available. Grains can be cooked and eaten in a variety of ways are are in almost every meal whether we are aware of it or not! In my home, rice and oats are pretty popular. I use wheat flour in almost all of my desserts unless I am cooking a gluten free dessert or meal. Why not check out and try the following recipes that use many different grains.

Oatmeal Raisin Bars

I love to try new desserts. Sometimes we are invited over to a friend’s house and I have to come up with something quick and hopefully good to make. I love to bake desserts for other people. They seem to think that it must have taken hours to cook just because it was baked! Even for the most simplest dessert. This recipe for Oatmeal Raisin Bars is no exception. All the ingredients are always stocked in my pantry and cooking/baking them up was a snap. But because they turn out so delicious, friends cannot believe that they are so simple to make.

They are super addicting too so be careful!

Delicious Rating: This is the perfect easy recipe for when you don’t have time to go to the store but need a dessert asap. Most everything is kept in the pantry anyways so there is no need to buy anything. These bars are delicious and super easy to cook. I didn’t know how the peach would taste but it was a wonderful addition. Feel free to switch it up with perhaps apricot. Use vegan margarine to make this dessert recipe completely vegan friendly.

Curried Rice & Chickpeas

Curry is able to change a simple dish into something dynamic. I used to make a Coconut Rice dish with chickpeas and green peas. Delicious. I decided to mix things up by adding in some red curry paste and tomatoes…can you say, “More Delicious”? Yes, it turned my ordinary Rice & Peas dish into something extraordinary.

Delicious Rating: This is a great curry recipe. Again it is a one pot meal, which I am a big fan of because they are usually easy recipes to cook up for dinner. The leftovers got time to blend the flavors and give it more depth which made it taste even better the next day. If you aren’t a big fan of curry, leave it out along with the tomatoes leaving a great coconut rice dish.

Oatmeal Peanut Butter Chip Cookies

I have never really been addicted to cookies. Maybe the filling of Oreo Cookies, if that counts, but homemade baked cookies never really do it for me. I thought it would change when I tried the cookie dough of the Oatmeal Peanut Butter Chip Cookies. It was super delicious, I couldn’t stop eating the dough until I remembered the raw eggs and that I had to have a certain amount for company. Anyways, baked ‘em up and no, just didn’t do it for me.

Delicious Rating: Super easy recipe to prepare the dough and bake, no special instructions. The cookies are good. Just because I wasn’t addicted to them doesn’t mean they weren’t tasty. My company that they were served to loved them. I added Reese’s Peanut Butter Chips but they didn’t stand out as much as I thought they would, neither did the oatmeal, perhaps both were at odds. Try using other chips like butterscotch, chocolate, or even a chocolate mint…yum!

Curried Bean Pilaf

 I am a sucker for one-pot meals. They are usually quick and easy recipes that taste great. This is a complete dish and is the star of the dinner show. Yes, you can serve it with some meat or a nice green salad too. The plus? It is a Vegan Recipe and delicious!

Delicious Rating: For a spicier meal, add more curry paste or powder. The first time around I used brown rice and since brown rice cooks a lot longer, the meal was too mushy. The second time around I used white rice and it turned out great. There is a great balance between hot from the curry, sweet from the raisins, and the perfect crunch from the pecans. Overall, it is a good meal and I plan on cooking it again!
