There are so many varieties of fish it is hard to know where to start when wanting to prepare a delicious Fish meal. Salmon, Tilapia, Halibut, Tuna,Bass, Catfish, and many more. I love baked fish and fried fish. But a perfect pan-fried fillet of fish is a great dish too. Serve fish with rice, couscous, pasta, or many vegetables for a complete wholesome dish. Good olive oil can create a good pasta sauce. Really, anything is good on Pasta! An olive oil sauce is so versatile that you can mix and match flavors and pastas in so many combinations. This easy pasta recipe is simple in ingredients and cooking. It is the perfect for left over pasta to make a quick dinner.

Delicious Rating: Add more vegetables if you would like. Any would go great with the anchovy olive oil sauce. This pasta is light and very refreshing. I love every bite of it. I did use left over pasta but boiled a bit more to have some reserved cooking water. I am sure that you will find this recipe to be delicious and easy to cook. Moroccan Couscous & Pan-Fried Fish

Couscous is a great alternative to the usual side of rice that you may have with dinner. It is light and such an easy recipe to make with most store bought packages cooking in 5-minutes. Since it is so light, I love to pair it with Fish or an array of vegetables. Couscous can be served plain, seasoned, or even with added goodies combined inside like this Moroccan Couscous recipe. I added green onion and sun-dried tomatoes to create a mild onion flavor and a rich smokiness from the tomatoes. Of course, the red & green aren’t bad to color up the couscous.

Delicious Rating: Making the Couscous is a very easy job. Even pan frying fish isn’t on the level of a ‘Master Chef’. This dish is simple and quick to cook up for dinner, either for a couple or a family. You can dress it up with a side of steamed vegetables too. I found it to be very refreshing and delicious. I definitely will make this Moroccan Couscous again!

Classic Fish & Chips

When I went to London with my Sister, the one thing that I really wanted to do was eat fish & chips in a pub. It was the ultimate tourist experience. We found a little place on the street. It was actually underground which added to the experience. Our fish & chips were the best I have ever had or maybe I was just really hungry as it was the first thing we had eaten all day! Traditional Brit Fish & Chips are served with mushy peas. Peas mushed and seasoned. Most include some baking soda for an interesting almost bitter taste. I didn’t care for them so they are excluded from my Classic Fish & Chips.

Delicious Rating: Yummy! Nothing ever goes wrong with fried food! The batter is very thick but holds up well on the fish. I used halibut and it was so nice and fluffy. The fries are delicious. Crispy on the outside and soft inside. You can change up the seasoning with whatever you would like and even cut them into wedges. You may want some experience frying food so as not to overdo cook the fish. I will definitely cook this easy recipe again!

Berkeley’s Skates on the Bay – Tuna Cakes

Crab Cakes are a must on any Bay Area restaurant’s menu. What makes the perfect Crab Cake? Crisp and flaky on the outside, not soft & soggy. It shouldn’t be a ‘heavy’ dish but rather light and refreshing almost. The flavors should be bold yet distinct and the crab should stand out in the forefront. Whatever sauce is served along side of it should not be overwhelming but complement the cakes. The Washington Dungeness Crab Cake at Skates on the Bay in Berkeley is crisp, light, and while enjoyable isn’t the best. The infusion of Asian flavors didn’t quite meld right. The butter sauce was smooth yet had something tangy in it to match the Asian spice. The panko crust was nice and crisp and the dish was light overall but the flavors dropped the ball.

Finding fresh lump crab can be a challenge when living in middle Mexico so I decided to try a Tuna Cake. Tell me what you think and if you made any adjustments to this easy recipe.
