Vegan Farmhouse Vegetable Soup

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 1 carrot, julienned
  • 5 stalks of celery chopped
  • 3 different colored bell peppers, diced
  • 3 cups of fresh green beans, cut into 1-inch pieces
  • 1 zucchini, sliced
  • 2 garlic cloves, minced
  • 8 cups of vegetable stock
  • 4 cups of flor de mayo beans (or another firm bean)
  • Salt & pepper to taste
  • Chopped fresh parsley
  1. In large pot heat olive oil over medium heat.
  2. Add onion, carrot, and celery; cook for 5-minutes or until softened.
  3. Add bell peppers, green beans, zucchini, and garlic; cook for another 5-minutes.
  4. Add vegetable stock and bring soup to a boil.
  5. Reduce heat to low and cover, cooking for 30 minutes.
  6. Add beans, salt & pepper to taste and cook for another 20 minutes.
  7. Sprinkle in parsley and serve immediately.
