Puerto Limon's Roxy's - Fried Chicken and Rice & Beans

  • Fried Chicken:
  • 3 eggs
  • ⅓ cup water
  • 1 cup of hot sauce
  • 2 cups of flour
  • 2 tbsp of pepper
  • 2 tbsp of garlic powder
  • 1 tbsp of salt
  • 2½ lbs of chicken pieces
  • Oil for frying
  • Caribbean Rice & Beans:
  • 1 can of red kidney beans, drained
  • 1 can of coconut milk
  • 2 cups of rice
  • 1 small onion, chopped
  • 1 clove garlic, chopped
  • 1 bay leaf
  • ¼ tsp of dried thyme
  • 1 tbsp of oil
  1. For the chicken: Heat oil to 350 F in a deep pot.
  2. Do not fill pot with more than ½ full of oil.
  3. Beat eggs with the water and add hot sauce to mixture.
  4. Put flour in a separate bowl.
  5. Season chicken with the pepper, garlic powder, and salt.
  6. Dip chicken pieces in the egg mixture then coat well with the flour.
  7. Fry the chicken in the oil until brown and crispy.
  8. Dark meat will cook for about 13 minutes and white meat 9 minutes.
  9. For the Rice & Beans: Add beans, coconut milk, and 3 cups of water in a large pot.
  10. Bring to boil and add the onion, garlic, thyme, bay leaf, and oil.
  11. Add the rice when it is all at a boil and stir for two minutes.
  12. Reduce heat to medium-low and cover.
  13. Cook for 30 minutes or until rice is tender and cooked through.
