Lemon Carrot Raisin Bread with Lemon Glaze

Ingredients
  • 1½ cup Raisins, chopped
  • ½ stick of Butter, softened
  • ¾ cup Brown Sugar
  • 2 Eggs
  • 1 tsp Vanilla Extract
  • 1 tbsp Lemon Zest
  • 1 tsp Cinnamon
  • 1 tsp Nutmeg
  • ½ tsp ground Cloves
  • 2 cups Flour
  • 2 tsp Baking Powder
  • ½ tsp Baking Soda
  • 1 tsp Salt
  • 1½ cup carrots, finely chopped or grated
  • 1 cup pecans, chopped
  • 1 cup Lemon juice, fresh & divided in half
  • Powdered Sugar
Instructions
  1. Preheat the oven to 350 degrees F.
  2. Butter & flour 2 loaf pans.
  3. Prep ingredients.
  4. Beat butter and brown sugar together until smooth.
  5. Add in eggs, vanilla, half the lemon juice, and lemon zest.
  6. Mix in cinnamon, nutmeg, and cloves.
  7. Combine flour, salt, baking powder, and baking soda together and add into batter mixture.
  8. Stir in carrots, pecans, and raisins.
  9. Pour into loaf pans and bake for 55 minutes or until toothpick comes out clean.
  10. Cool and turn up on a wire rack.
  11. Whisk remaining lemon juice with enough powdered sugar to form a glaze.
  12. Pour glaze on loaves.
  13. Enjoy.
