Vegetable Biscuit Cobbler

Serve alone or with a side salad.
Ingredients
  • Filling: 2 cups carrots, julienned
  • 1 onion, chopped
  • 2 potatoes, skinned and diced
  • 16 oz Green Beans, trimmed and cut into 1 inch pieces
  • 1 cup corn
  • 1 cup Peas
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 tsp oregano
  • 2 tsp parsley
  • 2 tbsp olive oil
  • 8 ounces seitan (Seitan Recipe)
  • Sauce: 4 tbsp butter
  • ⅓ cup flour
  • 1½ cup vegetable stock
  • 1 tbsp Worcestershire sauce
  • 1 cup milk
  • Biscuit Topping: 2 cups flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 tbsp butter
  • 1 cup milk
Instructions
  1. Preheat oven to 400 degrees F.
  2. Lightly oil a 9x13 baking dish and set aside.
  3. Prepare all veggies.
  4. Steam green beans until tender and place in bowl with corn and peas.
  5. In a saucepan melt 4 tbsp of butter over medium heat.
  6. Whisk in flour and whisk constantly for 4 minutes.
  7. Stir in vegetable stock, Worcestershire sauce, and milk.
  8. Continue to whisk constantly as sauce thickens over the next 5 minutes.
  9. Turn off heat and set aside.
  10. In a large bowl, combine flour, baking powder, salt, and 2 tbsp of melted butter.
  11. Using a fork or pastry blender combine into coarse crumbs.
  12. Add in milk and form a soft sticky dough. Set aside.
  13. Chop up seitan into small pieces.
  14. In a large pan, heat 2 tbsp of olive oil over medium heat.
  15. Add in carrots, onion, and potatoes.
  16. Cover and cook for 5 minutes.
  17. Stir in seasonings and seitan.
  18. Cook for an additional 5 minutes.
  19. Stir in green beans, corn, and peas.
  20. Add in sauce and pour into baking dish.
  21. Top with biscuit topping and spread evenly but not to edge of pan.
  22. Bake for 30 minutes or until topping is golden brown.
  23. Serve hot.
