Lemon Raspberry Bread & Lemon Glaze

A raspberry bread perfect as a side of a hearty breakfast.
Ingredients
  • 1 stick butter, melted
  • ⅔ cup sugar
  • 2 eggs
  • ½ cup buttermilk
  • ½ cup lemon juice
  • 2 tbsp lemon zest, finely grated
  • 1 tsp vanilla extract
  • 2 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1½ cup fresh raspberries
  • ¼ cup lemon juice
  • 2 cups powdered sugar
Instructions
  1. Preheat oven to 400 degrees F.
  2. Lightly oil & flour bread pans.
  3. In a large bowl cream butter and sugar together with an electric mixer.
  4. Add in eggs.
  5. Mix in buttermilk, lemon juice, lemon zest, and vanilla.
  6. Stir in flour, baking powder, baking soda, and salt.
  7. Gently fold raspberries into mixture.
  8. Evenly spoon into bread pans.
  9. Bake for 25 minutes or until inserted toothpick comes out clean.
  10. Cool on wire racks and invert.
  11. Whisk powdered sugar into lemon and add more of each if necessary.
  12. Pour glaze over bread and serve.
