New Classic Potato Salad

Great with a summer barbecue meal.
Ingredients
  • 4 lbs of potatoes, skinned and cooked until tender, chopped
  • 10 strips of bacon, cut into little pieces
  • 1 large red onion, finely diced
  • ¼ cup white wine vinegar
  • ¼ cup of olive oil
  • 2 tbsp sugar
  • 4 hard-boiled eggs, chopped
  • 2 stalks of celery, diced
  • 1 cup sour cream
  • ½ cup mayonnaise
  • Salt & Pepper to taste
Instructions
  1. In a large bowl combine onion, with vinegar, olive oil, and sugar.
  2. Let sit for 10 minutes.
  3. Add in celery, bacon and potatoes.
  4. Fold in sour cream, mayonnaise, and eggs.
  5. Salt & pepper to taste.
  6. Chill for 1 hour minimum.
