Tomato Basil Soup

A Vegan Recipe!
  • 4 large ripe tomatoes
  • ½ cup of fresh basil, chopped
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 1 carrot, shredded
  • 1 tsp sugar
  • 2 cups vegetable broth
  • 1 tsp salt
  1. Cut each tomato in half and squeeze out seeds.
  2. Chop up tomatoes.
  3. In a saucepan, heat oil over medium heat.
  4. Add onion and carrot and cook until tender.
  5. Add tomato and sugar and bring to boil.
  6. Cover and reduce heat and let simmer for 15-minutes.
  7. Pour half of tomato mixture in blender and blend on low until smooth.
  8. Pour into a large bowl and repeat with second half.
  9. Return all to saucepan and stir in chopped basil, broth, and salt; heat over medium heat for 5 minutes.
  10. Serve hot or cold.
