Lemon Carrot Raisin Bread w/Lemon Glaze

There is nothing better than a warm bread with lemon glaze. This recipe combines some great flavors: lemon, raisins, and sweetness of the carrot. It is semi-healthy…maybe, but delicious none-the-less. I usually have to make two batches of glaze because I eat the first one while waiting for the bread to cool.

Delicious Rating: This is an easy recipe to make ahead for breakfast or a day’s snack. The bread stays together quite nicely and the carrots, raisins, and pecans are a nice addition. You can add walnuts if you would rather have that instead of pecans. Soak the raisins in some liquor for a little grown up flavor!

Vegetable Biscuit Cobbler

Warm one-dish-meals are perfect for a busy winter day. Like a pot-pie, a vegetable cobbler creates a warm comfort food. I love biscuits and I love veggies, so why not put them together with a decadent sauce…and eat on the couch…

This is a vegetarian dish. You can make it vegan by swapping out the butter with vegan margarine. I used seitan and it was a great addition but not needed. If you want meat meat, please feel free to add it in. Just want the veggies? It will taste delicious as well!

Delicious Rating: Delicious, Delicious, Delicious. I will definitely make this a lot more in the future. No changes necessary for me. The vegetables stand out on their own and meld deliciously in the creamy sauce. The biscuit is divine. Crunchy crust with a soft warm inside…My mouth is seriously salivating writing this. This easy recipe has a lot of steps but is worth the wait.

Lemon Raspberry Bread & Lemon Glaze

Lemon. Raspberry. The ultimate bread couple. Add some lemon glaze and Watch Out! Deliciousness is on the way!

I made this easy recipe for bread when we were going out of town for a few days. I always make some type of bread for road-trips and hotel stays. The bread stayed great wrapped and was the perfect snack throughout the day.

Delicious Rating: Although the bread tasted good it fell apart to easily. Also, all the raspberries sunk to the bottom while baking. I didn’t like that the bottom was basically berries. Of course the lemon glaze was delicious. Overall, I wouldn’t make this bread again. The flavor is there but in the end I have had better lemon bread that I will make next time.

Homemade Soft Mall Pretzels

Mall Pretzels. You smell them as soon as you enter the mall. You don’t really plan on buying one, I mean you just ate lunch. But the aroma! It gets stronger and stronger as you casually window shop. All you can think of is getting your hands on one of those freshly baked pretzels…Imagine if you could have that same aroma at home. I made these pretzels for some friends from Jersey. They say that one of things they miss most about living in the states is Mall Pretzels. So I made these for a road trip to Morelia. They are vegan and turned out delicious. It was hard to share them!

Delicious Rating: This recipe is a yeast dough recipe, so if it isn’t your first time making a yeast dough I am sure you will be fine! The dough is gorgeous when you knead it, feels fantastic. The pretzels turn out so soft and ‘buttery’. My DH seriously thought I put butter in this easy recipe because they taste of butter. Nope, I am not sure what it is but these vegan bad boys are better than any Mall Pretzel I have ever had.
